The invention relates to a pastry product based on wine industry by-products. According to the invention, the product consists of 1% patience extract, 6.3% Psyllium seeds, 1.9% marc powder, 4.3% vegetable oil, 29.8% rice flour, 0.7% salt and, for the remainder, water, the parts being expressed by mass, the product being a gluten-free cookie with an energy value of 103.75 kcal/100 g.
