Abstract

천식 및 아토피성 피부염을 일으키지 않고, 장시간동안 신선도를 유지하는 무취, 무균상태의 안전하고 위생적인 달걀이 제공된다.
이 달걀은 불쾌한 생선 냄새가 없으며 요리하지 않고 먹기 적합하다.
이 달걀은 암탉의 사료중에 녹차 가루 0.1 내지 10 중량/중량%를 혼입함으로써 생산된다.

Description

녹차란 및 이의 생산방법
본 내용은 요부공개 건이므로 전문내용을 수록하지 않았음
제1도는 본 발명에 따라 생산된 달걀의 점성 알부민을 나타낸다. 제2도는 녹차가 함유된 사료를 먹인 암탉이 생산한 달걀의 점성의 투명한 알부민 및 밝은 황색의 난황을 나타낸다. 제3도는 녹차가 함유되지 않은 사료를 먹인 암탉이 생산한 달걀의 덜 점성인 다소 편평한 반투명 알부민 및 희끄무레한 황색의 난황을 나타낸다.

Claims (13)

  1. 암탉 사료에 녹차 가루 0.1 내지 10중량/중량%을 혼입함을 포함하는, 녹차란 (green tea egg)의 제조 방법.
  2. 제1항에 있어서, 곡물 단백질을 가공하지 않은 또는 건조시킨 녹색 야채와 혼합하고, 혼합물을 락트산 세균 존재하에서 발효시켜 사료를 제조하는 방법.
  3. 제1항에 있어서, 녹차가루의 양이 0.8 내지 2.5 중량/중량%인 방법.
  4. 제1항에 있어서, 녹차 가루의 양이 1.0 내지 1.5 중량/중량%인 방법.
  5. 제1항에 있어서, 녹차 가루가 적어도 약 500㎎/100g의 비타민 C 함량을 갖는 방법.
  6. 제5항에 있어서, 녹차 가루가 적어도 약 100㎎/녹차 잎 100g의 비타민 C 함량을 갖는 녹차 잎을 단시간동안 열처리하는 단계; 열 처리한 녹차 잎을 건조시키는 단계; 건조시킨 녹차 잎을 액체 질소로 동결시키는 단계; 및 동결된 녹차 잎을 파쇄하는 단계에 의해 제조한 것인 방법.
  7. 투명한 무색의 알부민 및 확고하게 서있고 탄성 및 밝은 황색의 난황을 포함하는 녹차란.
  8. 제7항에 있어서, 암탉의 사료에 녹차 가루 0.1 내지 10 중량/중량%를 혼입하여 생산한 녹차란.
  9. 제7항에 있어서, 암탉의 사료에 적어도 약 500㎎/100g의 비타민 C 함량을 갖는 녹차 가루 0.1 내지 10중량/중량%를 혼입하여 생산한 녹차란.
  10. 제7항에 있어서, 적어도 약 100㎎/녹차 잎 100g의 비타민 C 함량을 갖는 녹차 잎을 단시간동안 열처리하는 단계; 열 처리한 녹차 잎을 건조시키는 단계; 건조시킨 녹화 잎을 액체 질소로 동결시키는 단계; 및 동결된 녹차 잎을 파쇄하는 단계에 의해 제조한, 적어도 약 500㎎/100g의 비타민 C 함량을 갖는 녹차 가루 0.1 내지 10 중량/중량%를 혼입하여 생산한 녹차란.
  11. 제7항에 있어서, 무취인 녹차란.
  12. 제7항에 있어서, 통상의 달걀보다 장시간 저장될 수 있는 녹차란.
  13. 제8항에 있어서, 사료가 곡물 단백질을 가공하지 않은 또는 건조시킨 녹색 야채와 혼합하고 락트산 세균 존재하에 발효시켜 생산된 것인 녹차란.
