Claims (8)
- 20중량 %이상의 모노-U-디-S글리 세라이드(SSU: 식중 U는 대응하는 유리 지방산으로서 40℃이하의 융점을 갖는 지방산 잔기이며 글리 세라이드의 1- 또는 3- 위치에 결합되고, S는 45℃이상의 융점을 갖는 포화지방산 잔기이며 나머지 위치에 결합되고, SSU에서 모든 S중 75중량 %이상이 스테아르산 잔기 또는 팔미트산 잔기임)를 함유하는 항-블루밍제(anti-bloomig agent).
- 제1항에 있어서, SSU함량이 40중량 %이상인 항-블루밍제.
- 제1항에 따른 항-블루밍제를 경화 버터용 다른 원료와 혼합하여 경화 버터중 SSU함량을 2.0중량 %이상으로 높임을 특징으로 하는 경화 버터의 제조방법.
- 제3항에 있어서, SSU함량을 4~25중량 %로 높이는 방법.
- 제3항에 있어서, SSU함량을 6~25중량 %로 높이는 방법.
- 제1항에 따른 항-블루밍제 또는 그것을 함유하는 경화 버터를 경화버터용 다른 원료와 혼합하여 경과 버터 제품의 지방 성분중 SSU함량을 1.2중량 %이상으로 높임을 하는 경화 버터 제품의 제조방법.
- 제6항에 있어서, SSU함량을 2.5~7.5중량 %로 높이는 방법.
- 제6항에 있어서, SSU함량을 3.5~7.5중량 %로 높이는 방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
