Claims (17)

  1. 식물성 또는 동물성 단백질을 염산으로 가수분해시켜 슬러리를 제조한 후, 가수분해되지 않은 잔류 물질을 여과하기 전 또는 후에 알칼리를 사용하여 pH를 8~14로 처리하고 소정 시간을 유지하여 바람직하지 않은 염소화 화합물의 양을 감소시킨 후, pH를 4~7로 재조정하여 액체 가수분해 단백질 여액을 수득함을 특징으로 하는 가수분해 단백질의 제조방법.
  2. 제1항에 있어서, 액체 가수분해 단백질 여액을 농축시켜 몇몇 염으로 침전시키고, 다시 여과시켜 액체 가수분해 단백질 산물을 수득하는 방법.
  3. 제1항에 있어서, 염산의 농도가 15~25중량%인 방법.
  4. 제1항에 있어서, 염산의 농도가 17~19중량%인 방법.
  5. 제1항에 있어서, 가수분해 온도가 70~140℃인 방법.
  6. 제1항에 있어서, 가수분해 온도가 110~115℃인 방법.
  7. 제1항에 있어서, 가수분해 시간이 2.5~8시간인 방법.
  8. 제1항에 있어서, 가수분해 시간이 3~5시간인 방법.
  9. 제1항에 있어서, 가수분해를 100psig까지의 승압하에서 수행하는 방법.
  10. 제1항에 있어서, pH를 NaOH 및/또는 Na2CO3로 조정하는 방법.
  11. 제1항에 있어서, pH를 10~12로 조정하는 방법.
  12. 제1항에 있어서, 슬러리를 조정된 pH에서 주위 온도 ~170℃로 수초~수주동안 유지하는 방법.
  13. 제1항에 있어서, 슬러리를 조정된 pH에서 35~55℃로 30분~4시간동안 유지하는 방법.
  14. 제1항에 있어서, 슬러리를 조정된 pH에서 100~140℃로 1~5분동안 유지하는 방법.
  15. 제1항에 있어서, pH를 5~5.5로 재조정하는 방법.
  16. 제15항에 있어서, 온도가 10~50℃인 방법.
  17. 제2항에 있어서, 액체 가수분해 단백질 산물을 더 증발시킴으로써, 건조시켜 분말로 분쇄할 수 있는 페이스트를 수득하는 방법.
