Claims (15)
- 적어도 2개의 성분 (a) 및 (b)를 포함하는 캔디 제품으로서,
(a)는 적어도 하나의 설탕, 설탕 대체물, 설탕 유사 물질 또는 이들의 혼합물을 포함하는 무알코올 성분, 및
(b)는 담체 매트릭스(carrier matrix) 내에 에탄올 또는 알코올성 액체의 혼합물을 포함하는 성분이며,
상기 성분 (a) 및 (b) 각각은 캔디 제품 내에서 상호 간에 경계면을 포함할 수 있고, 상기 성분 (a) 및 (b) 각각은 캔디 제품 내에서 고형 성분으로 존재하고, 따라서 전체로 고형 캔디 재료를 형성하며, 상기 알코올 또는 알코올성 액체가 상기 고형 캔디 재료 전체에 걸쳐 실질적으로 균일하게 분포하는 캔디 제품. - 제1항에 있어서, 성분 (a) 및 (b)는 3개 이상의 교대하는 층들 내에 존재하는 캔디 제품.
- 제1항 또는 제2항에 있어서, 캔디 제품은 외부 표면에 성분 (a)를 포함하는 캔디 제품.
- 제1항 내지 제3항 중 어느 한 항에 있어서, 경질 캔디, 눈깔사탕, 막대 사탕, 연질 캔디 또는 쫄깃한 캔디의 형태인 캔디 제품.
- 제1항 내지 제4항 중 어느 한 항에 있어서, 캔디 제품은 충전물 (c)를 포함하는 중공체 형태이고, 상기 충전물 (c)는 바람직하게는 액상 또는 유동성 알코올성 충전물인 캔디 제품.
- 제1항 내지 제5항 중 어느 한 항에 있어서, 성분 (b)의 담체 매트릭스는 고형 또는 분말형 설탕, 설탕 대체물 또는 설탕 유사 물질, 미결정 셀룰로스, 메틸-, 에틸-, 히드록시프로필-, 히드록시프로필메틸-, 메틸에틸-, 카복시메틸-, 나트륨 카복시메틸셀룰로스 또는 셀룰로스 에테르들과 같은 셀룰로스 군으로부터의 고형 또는 분말형 증점제, 또는 하이드로콜로이드 겔로부터 선택되는 캔디 제품.
- 제1항 내지 제6항 중 어느 한 항에 있어서, 성분 (a) 및/또는 (b)는 증점제, 향미제, 착색제, 감미제, 산성화제, 유제품, 착색 식품 및 이들의 혼합물로 이루어진 군으로부터 선택되는 하나 이상의 첨가제를 포함하는 캔디 제품.
- 제1항 내지 제7항 중 어느 한 항에 있어서, 무알코올 성분 (a) 내의 적어도 하나의 설탕, 설탕 대체물, 설탕 유사 물질 또는 이들의 혼합물의 양은 상기 성분 (a)를 기준으로 65 내지 100 중량%인 캔디 제품.
- 제1항 내지 제8항 중 어느 한 항에 있어서, 성분 (b) 내의 에탄올 또는 알코올성 액체의 양은 상기 성분 (b)를 기준으로 10 내지 95 중량%인 캔디 제품.
- 제1항 내지 제9항 중 어느 한 항에 따른 캔디 제품을 제조하기 위한 공정으로서, 상기 공정은,
(1) 성분 (a)의 요구되는 구성성분들의 혼합물 또는 용융물을 가열하여 무알코올 성분 (a)의 점성, 성형성, 점소성, 확산성 또는 유동성 매스를 제조하는 단계;
(2) 실질적으로 균일한 점성, 성형성, 점소성, 유동성 또는 확산성 혼합물을 수득하기 위해, 담체 매트릭스의 재료를 제공하고, 선택적으로 추가 첨가제를 혼합하고, 담체 매트릭스의 재료에 에탄올 또는 알코올성 액체를 교반하여 성분 (b)를 제조하는 단계;
(3) 단계 (1)의 상기 무알코올 성분 (a)의 점성, 성형성, 점소성, 확산성 또는 유동성 매스 내에 단계 (2)의 성분 (b)를 매립 또는 봉입하여, 상기 성분 (a) 및 (b) 각각이 상호 간에 경계면을 포함할 수 있고, 상기 알코올이 실질적으로 균일하게 분포된 캔디 재료를 형성하는 단계;
(4) 단계 (3)으로부터 수득한 캔디 재료를 성형하여 선택적으로 적어도 하나의 구멍을 갖는 중공체 형태일 수 있는 성형 제품을 수득하는 단계;
(5) 선택적으로 충전재 (c)를 제공하는 단계;
(6) 선택적으로 단계 (5)의 상기 충전재 (c)를 단계 (4)의 적어도 하나의 구멍을 갖는 중공체 형태의 상기 성형 제품 내로 충전하고, 상기 성형 제품의 적어도 하나의 구멍을 폐쇄하는 단계;
(7) 선택적으로 단계 (4) 또는 단계 (6)의 상기 성형 제품 내에 스틱을 제공하는 단계;
(8) 상기 성형 제품을 냉각하여 상기 캔디 제품을 수득하는 단계;를 포함하는 공정. - 제10항에 있어서, 단계 (1)의 무알코올 성분 (a)의 매스는 적어도 하나의 설탕, 설탕 대체물, 설탕 유사 물질 또는 이들의 혼합물의 용융물인 공정.
- 제10항 또는 제11항에 있어서, 단계 (2)에서 성분 (b)의 제조는 고형 또는 분말형 설탕, 설탕 대체물 또는 설탕 유사 물질, 특히 히드록시프로필셀룰로오스의 셀룰로오스류의 군으로부터의 고형 또는 분말형 증점제로 이루어진 군으로부터 선택되는 담체 매트릭스의 고형 또는 분말형 재료 내에 에탄올 또는 알코올성 액체를 혼합하여 발생하는 공정.
- 제10항 또는 제11항에 있어서, 단계 (3)에서 성분 (b)의 매립은 무알코올 성분 (a)의 유동성 매스의 층에 상기 성분 (b)를 도포하고, 상기 성분 (b)의 층에 무알코올 성분 (a)의 유동성 매스의 적어도 하나의 추가적인 층을 도포하고, 선택적으로 성분 (b) 및 (a)의 추가적인 층을 도포하여 수행되며, 이렇게 형성된 3층 또는 다층 캔디 재료의 최외층은 상기 무알코올 성분 (a)로부터 형성되는 공정.
- 제10항 또는 제11항에 있어서, 단계 (3)에서 성분 (b)의 매립은 무알코올 성분 (a)의 유동성 매스의 층에 상기 성분 (b)를 도포하고, 이렇게 형성된 다층 캔디 재료를 롤링 또는 트위스팅 및 반죽하여 수행되며, 이렇게 형성된 다층 롤 또는 트위스팅 가닥의 최외층은 상기 무알코올 성분 (a)로 형성되는 공정.
- 제10항 또는 제11항에 있어서, 단계 (3)에서 성분 (b)의 매립은 무알코올 성분 (a)의 유동성 매스의 층에 성분 (b)를 도포하고, 이렇게 형성된 층상 캔디 재료를 폴딩하여 4층 또는 다층의 캔디 재료를 형성함으로써 수행되며, 이렇게 형성된 상기 캔디 재료의 최외층은 상기 무알코올 성분 (a)로 형성되는 공정.
