Claims (14)
- 하기 단계들을 포함하는 커피 음료 분말의 제조 공정:
a) 볶아서 분쇄한(roast and ground) 커피콩들 및/또는 커피 추출물로부터 가스 및/또는 스팀으로 향을 스트리핑(stripping)하는 단계;
b) 볶아서 분쇄한 커피콩들을 수성 액체로 추출하여 수성 커피 추출물을 제조하는 단계;
c) 단계 b)에서 추출된 커피 고형물을 건조물(dry matter) 중량 기준으로 5% 이상, 그리고 지방과 단백질 중에서 선택되는, 커피로부터 유래하지 않는 화합물들을 건조물 중량 기준으로 5% 이상 포함하는 수성 조성물을 제조하는 단계;
d) 단계 a)에서 얻은 커피 향을 단계 c)에서 제공된 수성 조성물에 첨가하는 단계; 및
e) 커피 향이 첨가된 상기 수성 조성물을 건조하여 커피 음료 분말을 제조하는 단계. - 제1항에 있어서,

단계 d)의 커피 향 첨가 전에 단계 c)의 상기 수성 조성물이 65℃ 이상의 온도로 열처리되는, 공정. - 제1항 내지 제12항 중 어느 한 항에 있어서,
