Claims (3)
- 벌꿀 희석액과 젖산균 시디-02균을 이용하여 발효하는 것을 특징으로하는 벌꿀젖산발효음료.
- 제1항에 있어서, 제조된 벌꿀젖산발효음료에 구연산, 기타 맛성분 추출액을 첨가하여 제조하는 것을 특징으로하는 가미젖산발효음료.
- 본 발명은 벌꿀액을 젖산발효음료로서 1) 천연벌꿀을 희석하여 10브릭스로 조정하여 살균하고 냉각하는 벌꿀액 제조공정과; 2) 1)의 공정에 의해 제조되는 벌꿀액에 젖산균 시디-02균을 이용하여 젖산발효하는 공정과; 3) 2의 공정에서 제조되는 발효액의 젖산농도가 3퍼센트가 되면 냉장하여 숙성과 균체의 응과를 유도하여 상층부의 액을 분리하여 용기에 주입하고 살균하여 완성하는 벌꿀젖산발효음료 제조 방법과; 4) 3)의 공정에서 제조되는 벌꿀젖산음료에 구연산과 맛성분 추출액을 소량 첨가하여 가미벌꿀젖산발효음료를 제조하는 것을 특징으로하는 가미벌꿀젖산발효음료와 가미벌꿀젖산발효음료 제조 방법.
