Claims (26)
- 평균 최장 직경이 0.1 내지 20 μm인 식용 젤 입자의 제조 방법으로서,
알기네이트를 포함하는 용액을 고전단 혼합하면서, 용액에 칼슘 이온의 공급원을 첨가하는 단계를 포함하고,
칼슘 이온의 공급원은 탄산칼슘을 포함하고,
용액 및/또는 칼슘 이온의 공급원은 저속으로 방출되는 양성자의 공급원을 포함하고,
저속으로 방출되는 양성자의 공급원은 글루코노-δ-락톤인, 식용 젤 입자의 제조 방법. - 제1항에 있어서, 젤 입자는 평균 최장 직경이 1 내지 10 μm인, 식용 젤 입자의 제조 방법.
- 제1항 또는 제2항에 있어서, 젤 입자는 D90이 20 μm 이하인, 식용 젤 입자의 제조 방법.
- 제1항 또는 제2항에 있어서, 용액은 수용액이고, 0.1 내지 10% w/w의 양의 알기네이트를 포함하는, 식용 젤 입자의 제조 방법.
