ii プディング、クリーム、ムース及びその他のデザート;
iii 乳脂肪製品、混合脂肪製品、食用脂肪、食用油;
iv ベーカリー製品、例えばクッキー(Kleingebaeck)及びケーキ類(feinen Backwaren)を含むパン、保存ベーカリー製品、ビスケット製品(Keksprodukt)及びワッフル;
v スプレッド、特に脂肪含有スプレッド、マーガリン製品及びショートニング;

ヨーグルト基質に組み込まれたω3脂肪酸の酸化分解を抑制又は減少させるイソマルツロースの能力を調べた。
そのためにω3脂肪酸としてDHA CL(Lonza)を混入した全脂肪ヨーグルト(ヨーグルト、マイルド、脂肪3.5%、Milram)を使用した。下記のヨーグルト調製物を製造した。
バッチ1(本発明による):100gにつきイソマルツロース5g
バッチ2(本発明による):100gにつきイソマルツロース10g
バッチ3:100gにつきフルクトース5g
バッチ4:100gにつきフルクトース10g
バッチ5:100gにつきスクロース5g
バッチ6:100gにつきスクロース10g
ヨーグルト調製物の製造直後にそれぞれブランク試料(Nullproben)を採取し、製造直後の調製物中のω3脂肪酸の回収率を測定した。
すべてのブランク試料バッチで例外なく、当初使用したω3脂肪酸の97〜99%の回収率が認められた。
酸化に敏感な成分を含むインスタント飲料の内因的抗酸化能力(EAP)、それとともに貯蔵安定性を調べた。そのために、ベースとしてそれぞれイソマルツロース又はスクロースを含む下記のインスタント飲料粉末配合表に従ってインスタント飲料を新たに調製した。

これらのバッチはそれぞれ飲料粉末のように使用し、水に溶解した。その際完成インスタント飲料200mlにつき約7〜20gの飲料粉末を使用した。
ビールの香味安定性への影響を試験するために、市販のダイエットビール(炭水化物をほとんど含まない)にイソマルツロースを混合し、比較試料とともに所定のビール老化を生じさせた。次の分析を行った。比較試飲、ビールの還元能の測定、ESRによる酸化安定性の測定及び老化成分のガスクロマトグラフィー測定。
ある種の化学物質は、貯蔵したビールの老化臭の発生に関連がある。老化臭の原因物質(「老化成分」)を見出す必要がある。
2つのバッチを26℃で14日間貯蔵した。続いて老化成分を、クロマトグラフィーを用いて周知の方法で検出し、数量化した。
表5は26℃で14日間貯蔵した後にクロマトグラフィーにより測定した老化成分を示す。
ビールの香味安定性の決定のための、一般に有意義であると認められているもう一つの分析法は、ESR(電子スピン共鳴分光分析)による試料の酸化安定性の測定である。Methner及びKunzの方法によりBAX値が決定される。ESRによるビールの酸化安定性の測定の際には、Methner及びKunzの方法(Methner及びKunz、2006年「ESR分光分析によるビールの酸化安定性の精密な予測(Genauere Prognosen zur oxidativen Bierstabilitaet mittels ESR-Spektroskopie)」、Brauerei Forum 2006: 7-9)によりBAX値が測定される。BAX(Beverage Antioxidant Index[飲料抗酸化指数])は次のように計算される:

イソマルツロースの添加はビールの貯蔵安定性及び香味安定性に対して好ましい影響を及ぼす。2g/lの添加は比較的少ないと見られ、割合をより多くすると、その効果を強める。
Claims (14)
- 抗酸化作用成分としてイソマルツロースを含む、食品、飼料、化粧品及び医薬品のための酸化防止剤。
- 請求項1で特徴づけられた酸化防止剤を含む、食品、飼料、化粧品又は医薬品。
- 食品に添加された唯一の抗酸化作用を有する補助物質としてイソマルツロースを含む、請求項2に記載の組成物。
- 不飽和脂肪酸から選択される少なくとも1つの酸化に敏感な成分を含む、請求項2又は3に記載の組成物。
- 不飽和脂肪酸がω3脂肪酸及びω6脂肪酸から選択される、請求項4に記載の組成物。
- 食品が
