Abstract

The invention concerns a new procedure for the preparation of an exclusively vegetable food product, comprising: A first stage of preparation of an intermediate product (tofu) consisting of: soya beans, water, magnesium chloride or other mineral salts. A second stage of shaping the product by extrusion followed by cutting with a suitable machine. A third stage of covering the said suitably shaped intermediate product (tofu) with powdered live wheat gluten. A fourth stage of separation of the excess powdered live wheat gluten on the suitably shaped intermediate product (tofu) by sifting. A fifth stage of cooking. A sixth stage of cooling. A seventh stage of aromatisation of the product. An eighth stage of packing the intermediate product (tofu) suitably shaped, coated, cooked and aromatised. The main purpose of the present invention is to introduce a new procedure to confront and solve the following problems: 1) The creation of a recipe from the point of view of nutritional ingredients. 2) Optimisation of the production technology. 3) Selection and verification of the effectiveness of the preservation technology.
