Abstract
1,221,146. Wort powder. CHEMISCHE FABRIEK "NAARDEN" N.V. April 9, 1969 [April 10, 1968], No.18102/69. Heading C6E. Wort is prepared by dissolving a powdered wort in water to a concentration suitable for the preparation of beer and the thus-prepared wort is fermented to produce beer. Ordinary wort may be admixed with the prepared wort prior to the fermentation and hop bitter substances added before, during or after fermenting. The wort powder employed may have been produced by concentrating a liquid wort in a vacuum film evaporator to a solids content of no more than 60% by weight (e.g. 50%) and drying the concentrate, as by spray-drying or freezing, to a product with a moisture content of no more than 5% by weight. The production of the wort powder and the subsequent preparation and fermentation of the prepared wort are preferably carried out continuously.
