Abstract
The intrinsic setting time of pectin is altered by treating solid pectin with an acidic reagent for a period insufficient to destroy the gel-forming capacity of the pectin. The reagent may be an acid, an acidic substance, or an acid-forming substance, and may be liquid or gaseous, aqueous or anhydrous, but any carrier for the reagent should not dissolve or disperse the pectin. Suitable acid reagents are hydrochloric, sulphuric, sulphurous, phosphoric, nitric or lactic acids, chlorine, hydrogen chloride, hydrogen sulphide, sulphur dioxide, sulphur trioxide, or acid methyl sulphate. Carriers which may be used are alcohols, glycols, ethers, ketones, acetyl chloride, ethyl acetate, acid methyl sulphate, aldehydes, amines, aliphatic or aromatic hydrocarbons, or air or other gases. Usually the setting time is increased, but with anhydrous methyl alcohol as carrier, the setting time is shortened. It is sufficient to store pectin containing residual acid and from 2 to 10 per cent of water to change the setting time. Increase of temperature or acid concentration shortens the necessary period of treatment. To stop the treatment and stabilize the pectin, it is washed with alcohol or other liquid, which may contain a buffer substance, and dried. Specification 239,635, [Class 121], is referred to.
