Abstract

238,880. B³hler Geb. Aug. 22, 1924, [Convention date]. Cocoa preparations.-Chocolate is prepared in a single machine through which a stream of hot fresh air is continuously passed, the machine comprising an enclosed rolling mill, in which the rolling, stoving, and conching is effected, having a trough for mixing and kneading the material. In one form the apparatus, Figs. 1 and 3, is enclosed in a chamber 20 and comprises a mixing trough 14 provided with a jacket containing steam heating coils 32 and having mixing blades 13 rotated through gear wheels 10, 11 from a beltdriven pulley 8. The outlet aperture 16 of the trough 14 is adjustably closed by a gate 15 operated through a rack and pinion 19, 17 from a hard-wheel 18. The chocolate dough passes from trough 14 through feed rollers 6, 7 to the rollers 2 .. 5 of the rolling mill 1 which run at different circumferential speeds and may be adjusted by hand-wheels 29. The rollers 2 .. 7 are driven through gearing 9 from the pulley 8. Lateral guides 35 on the rollers keep the dough from being squirted off. The dough is removed from roller 5 by a scraper 34, and passes to a basin 24 resting on a grate 25 which is pivotally carried by levers 28 above the inlet aperture 26 of trough 14, so that it can be swung aside. Fresh air heated by a steam coil 31 is fed by a fan 30 through a conduit 21 into the chamber 20 has a door 23. In a modification, the rolling mill 1 is provided with two mixing troughs and two series of feed rolls to provide for continuous working. A temperature of approximately 70-80‹ C. may be maintained within the chamber. Dry ground cocoa and ground sugar are added to the mixer, or unground sugar may be employed, the charge after mixing being given a preliminary rubbing and grinding by passing through the rolling mill followed by the final fine rubbing and grinding. The sugar and the ground cocoa may be mixed &c. in one trough of a two-trough machine and the dough passed through the rolling mill to the second trough from which after mixing &c. it is again passed through the mill. The Specification as open to inspection under Sect. 91 (3) (a) comprises also a process in which ground chocolate dough prepared by the known process is mixed, kneaded, and rolled in the above apparatus to obtain the required consistency and quality. This subject-matter does not appear in the Specification as accepted.
