Abstract

1422792 Dairy products UNILEVER Ltd 11 April 1973 [12 April 1972] 16851/72 Heading A2D A process for preparing a pasteurized packaged aerated viscous dairy product comprises aerating a viscous dairy product by mixing said product with a whipped aqueous solution of sugar containing a whipping aid, the non- fat dry matter content of the mixture being between 1 and 4% by weight less than the non-fat dry matter content of the corresponding aerated dairy product having the same consistency but which has not been pasteurized after aeration, packaging the aerated dairy product and subsequently pasteurizing said packaged dairy product. The product may be quark, cottage cheese or yoghurt. The product may contain cream, a stabiliser and/or fruit. The whipping aid is preferably a proteinbased whipping aid. Pasteurization takes place preferably above 50‹C.
