Abstract

1353101 Dough-proofing T HAYASHI 30 April 1971 [1 May 1970 25 Nov 1970] 12540/71 Heading A4D A device for preformed dough materials, in which the dough is carried through a housing 1, which is devoid of any baffling means, by a conveyor which is movable upwards by repeated horizontal movements between one end and the other end of the housing and short upward movements at said ends and in which a plurality of vertically distributed openings 12 are disposed in a wall of said housing for supplying gas of controlled temperature and humidity and temperature and humidity control devices are associated with each opening and can be actuated independently of each other to influence the quantity of gas discharged by the respective opening, zones of different temperature and humidity conditions in the interior of the housing being vertically adjustable with zones of higher temperature conditions being towards the upper portion of the housing. Steam is fed to each opening 12 from a boiler 13 and at each opening there is a motor-operated valve 18 controlled by a regulator (19) Fig. 3 (not shown) and a humidity detector (20). Similarly, a valve 21 controlled by a regulator (22) and a temperature detector 23 regulates the heated air. A method of proofing-dough comprises heating only the upper portion of the housing. This allows a constant speed of input and output whilst varying the time of proofing. Dough material carried on plates (34) Fig. 1 (not shown) is fed at an intake (8) on to trays (3) carried by an endless chain-belt (2) as described in Specification 1353102. The dough is deposited on a conveyor (7) at a take out (9) after proofing.
