197,846. Greenwood, R., and Vertical Oven Co. June 12, 1922. Proving - appliances.- In vertical apparatus for proving and baking bread the dough is caused to ascend a proving-chamber impregnated with steam and to descend through an oven heated by air or other hot gases. Trays of dough are fed by a conveyer 6 at the base of the proving-chamber 1 to ascending conveyers 7, 8 and are transferred by a band 4 near the top of the proving-chamber to descending conveyers in the oven 2. The several conveyers are operated through gearing from a shaft 21. A heater 5 which may be of the form described in Specifications 185,460, 192,762, or 193,327, [all in Class 51 (ii), Furnaces and kilns for applying &c.], supplies hot air or gases to the chamber 1 through trunks 45 having dampered outlets, and in the chamber adjacent each outlet is a louvered deflector. Exhaust trunks 46 return gases to the heater. A similar heater 5<a> supplies hot gases to the oven 2. An outlet 52 a certain distance below the transfer gear 4 in the proving-chamber, and an arrangement of dampered partitions in the exhaust trunks in the oven provides for a steam lock in the upper portion of the two chambers, which is supplied with steam by a pipe 55. Steam jets may be placed at various heights in the proving-chamber. The temperature may be controlled by pyrometers or any form of automatic thermostatic control.
