Abstract
1299009 Potato packs HAUPT-GENOSSENSCHAFT GmbH 16 Dec 1970 59795/70 Heading A2D A process for the manufacture of packs of pre-cooked potatoes comprises a continuous operation cycle in which the potatoes are first peeled, and then vacuum-packaged in foil packs and precooked by being heated in the packs, wherein before packing, the peeled potatoes are subjected to an intensive heat treatment in a hot gas or steam atmosphere until a thin surface layer of each potato has assumed a temperature of about 120‹C. The intensive heat treatment may be carried out in a rotating drum by flowing hot air, optionally mixed with steam, at at least 130‹C and a flow velocity of 1-8 m/sec on to the potatoes. The residence time of the potatoes in the drum is from 5 to 20 mins.
