Abstract

1282502 Foods STAUFFER CHEMICAL CO 1 July 1969 [15 July 1968] 33060/69 Heading A2B A process for the preparation of non-butterfat food comprises forming a mixture comprising liquid whey, at least 1% by weight of an alkali metal polyphosphate and an oil or fat, and then homogenising the mixture at 150-180‹F. The alkali metal is one having a M.W. less than 50 and the polyphosphate has a P 2 O 5 content of at least 66% by weight. The polyphosphate may be sodium or potassium polyphosphate or sodium hexametaphosphate. Whey may be condensed and have minerals and lactose removed therefrom before use. The. homogenisation may be carried out in two stages at the same or different superatmospheric pressures. The homogenised mixture may be dried. Components which may be present in the mixture include animal or vegetable oil or fat, sodium caseinate, corn syrup solids, sugar, honey, cyclamates, emulsifiers (e.g. mono- and diglycerides), stabilisers (e.g. carrageenan, tragacanth gum, guar gum, carboxymethyl cellulose) and buffers (e.g. dipotassium phosphate, sodium phosphate). Products which may be prepared include coffee whiteners, whipped toppings, frozen desserts, baby foods, process cheese, imitation sour cream, imitation cream cheese, cocoa drinks and soups.
