Abstract

1,136,269. Freeze-drying foods. A. L. DUFOUR. 25 Aug., 1966 [14 Sept., 1965], No. 38214/66. Heading A2D. Food products are dehydrated by (i) removing up to 60% of their water content by steeeping in hot boiling oil or fat, (ii) freezing the products to between -20‹C. and -150‹C., in a gaseous atmosphere, and (iii) freeze-drying the frozen products under reduced pressure to a moiture content of between 0.2% and 4%. In the examples, washed and prepared fish, mushrooms and aubergines are steeped in hot or boiling oil prior to freezing and freezedrying.
