In the preparation of dried mashed potatoes by slight pre-cooking, cooling, cooking, mashing and drying, the cooling is effected by passing a current of air over the surfaces of the potatoes. The cooling is preferably to below 15‹C. The precooking is effected in water or steam at below 100‹C., preferably at 65-75‹C. Prior to drying, colour, structure and tasteimproving substances may be added. In an example, glycerol monopalmitate, and, as preservatives, sodium sulphite and bisulphite and butylhydroxyanisole were added to the mash. The dried product may be reconstituted by mixing with milk with or without water.
