Abstract

A method of making a pastry dough comprising flour and water and containing a plastic shortening agent in an amount of 50-80% by weight of the total flour in said dough, comprises the steps of combining 25-45% of the flour with the total water, which may include ice particles, the water being at a temperature of not more than 40 DEG F.; mixing said combination until gluten has substantially developed; adding the remaining ingredients including shortening and flour; mixing to form a dough; and holding the dough at a temperature below 40 DEG F. but above the freezing point of the dough for at least 2 hours.
