Abstract

Beer is fermented in a tank 1 comprising an inclined cover 5 and an upright partition 2, which extends above the lower end of cover 5 and over which foam and solids carried thereby flow into chamber 4, the liquid filling chamber 3 so that foam is constrained to flow along the underside of most of the length of cover 5 to reach the free liquid area at partition 2. This flow is assisted by liquid circulator 21. A hood 10 has a viewing screen 11 and collects carbon dioxide which is removed by valve 19. Tank 1 is closed and of frusto-pyro midal or frusto-conical shape. The lower edge 6 may be horizontal or slope slightly towards outlet 7, and the lower edge in chamber 4 may slope towards outlet 6. Access doors 14, 15 are provided, and also a pipe 20 by which deposited yeast is removed after fermentation. <PICT:1062233/C6-C7/1>
