Abstract
<PICT:0801658/III/1> <PICT:0801658/III/2> For removing foam from fermenting beer, a fermenting tank has an inclined roof, a baffle having its top edge below the roof and which divides the tank into a beer chamber and a foam chamber, and an inclined ramp, e.g. a screen, extending angularly downward from the top of the baffle into the beer chamber. A tank 1 is partitioned by a baffle 17 to form a fermenting chamber 2 and a foam chamber 3. A second baffle 231 is fitted parallel to the baffle 17 such that its top edge 25 is approximately 111 below the low point 15 of the roof 14; a screen 26 is mounted on the tops of the two baffles. In operation, chamber 2 is filled with beer up to the level of the top edge 25 of the second baffle. As foam forms on the beer and as the volume of the beer increases during fermentation, the space between the beer and the roof 14 decreases and the slope of the roof presses the foam towards the inclined screen 26 and up the inclined surface to the top edge 19 of the baffle 17; beer carried with the foam drains back into the chamber 2 through the screen. The foam condensed in the chamber 3 is removed through an outlet 20.
