Abstract

L'invention concerne un procédé de préparation de produit protéine alimentaire Il s'agit d'un procédé de préparation d'un produit alimentaire à partir de sang entier ou de dérivés de sang contenant des globules rouges, ou de tissu animal contenant ce sang, caractérisé par le fait que l'on décolore le sang, dérivé de sang ou tissu en le traitant par un excès d'oxydant et qu'ensuite on décompose l'oxydant résiduel par réaction chimique ou enzymatique. Le produit obtenu est utile notamment comme ingrédient dans des biscuits secs pour animaux.
