Abstract

The press is intended for the manufacture of gruyere cheese and comprises a chassis, in plate form, which is mounted so that it can be turned over in a support around a horizontal axis; turning is effected through 180 degrees alternately in one direction and then in the other. Stops are provided on both faces of the chassis and these surround the form in which the cheese mould is arranged. Two telescopic presses are used; they are of the cylinder and piston type in which the cylinder acts on one of the moulds and the piston on the other. An increasing pressure is applied during the pressing operation which lasts for 20 hours. A row of such cheese presses can be controlled by a single control unit. Each individual press can deal simultaneously with two moulds of cheese and it is advantageous that the same control apparatus is sufficient for double the number of moulds.
