Claims (12)
1. Förfarande för att omvandla och isolera protein, särskilt vassla- eller sojapro-15 teiner, kännetecknat av att a) ett protein, sä som vassla eller soja eller dess koncentrat sätts i beröring med en reagens som bildar sulfitjoner för att sulfonera proteinet utan oxidant, och b) det sulfonerade proteinet utfalls vid suit pH, och c) det utfällda och/eller lösliga sulfonerade proteinet utvinns och utsätts för en even-20 tuell efterbehandling.
2. Förfarande enligt patentkrav 1, kännetecknat av at vasslan eller dess koncentrat sätts i beröring med en reagens som bildar sulfitjoner för att sulfonera proteinet vid en temperatur mellan 40-65 °C, företrädesvis mellan 50 och 60 °C. • ·
3. Förfarande enligt patentkrav 1 eller 2, kännetecknat av at vasslakoncentratet 25 har en proteinhalt mellan 9-12 vikt-%.
4. Förfarande enligt patentkrav 1, kännetecknat av att sojan eller dess koncentrat sätts i beröring med en reagens som bildar sulfitjoner för att sulfonera proteinet vid en temperatur mellan 60-80 °C, företrädesvis 65-75 °C.
5. Förfarande enligt patentkrav 1, 2, 3 eller 4, kännetecknat av att under punkt 30 (a) regleras pH tili värdet 5,5-8, företrädesvis 6-7.
6. Förfarande enligt nägot av patentkraven 1-5, kännetecknat av att vid sulfone-ringen under punkt (a) används sulfit 0,02-0,20 M, företrädesvis 0,05-0,10 M. j « 20 107116
7. Förfarande enligt patentkrav 1, kännetecknat av att proteinets sulfonerings-grad päverkas genom att variera reaktionsforhällandena och ändra reagensmängden.

Förfarande enligt patentkrav 1, kännetecknat av att sulfongrappema avlägjsnas ur den utfällda och/eller lösliga sulfonerade proteinet samt sulfitema ur sammajlös-ning genom att sänka pH-värdet tili ca 1,5-4, varvid vardera frigörs som svaveldi- 10 oxid och fiia sulfhydrylgrapper bildas i proteinet.
11. Förfarande enligt patentkrav 1 eller 10, kännetecknat av att den äterstäende sulfiten oxideras tili sulfat genom att bläsa in luft i blandningen vid pH 4-7.
12. Förfarande enligt patentkrav 1, kännetecknat av att disulfidgrupper bildas; pä-nytt av de fiia sulfhydiylgrupperna genom att bläsa in luft i proteinblandningen, 15 vars pH är 4,5-8,4 och temperatur 45-75 °C. • · b · · 1 ( • l
