COMPRENDE: A) INFECTAR UNA ERWINIA AMYLOVORA CON EL FAGO ERA 103 EN UN MEDIO DE CRECIMIENTO, PRA OBTENER UN ENZIMA CON UNA ACTIVIDAD ESPECIFICA DE 200 A 3.500 UNIDADES/MG DE MATERIAL PROTEINICO DEL ENZIMA; B) SEPARAR EL ENZIMA POR CROMATOGRAFIA SOBRE COLUMNA DE RESINA; C) MEZCLAR EL ENZIMA CON UN FAGO QUE LISA ERWINIA AMYLOVORA Y UN ESTABILIZANTE COMO MERCAPTOETANOL O DITIOTREITOL EN UN PESO DE 0,1 MM A 10 MM POR MILIGRAMO DE ENZIMA, PARA OBTENER LA COMPOSICION DESEADA.
