LA HIDROLISIS SE LLEVA A CABO CON AGENTES QUE TIENEN ACTIVIDAD ENZIMATICA QUE SE OBTIENEN DE HOMOGENEADOS DE HIGADO DE TERNERA O DE DIVERSOS MICROORGANISMOS CULTIVADOS EN CONDICIONES AEROBIAS EN UN MEDIO DE CULTIVO DE PH ENTRE 6 Y 8, A UNA TEMPERATURA ENTRE 20 Y 80 C.
