Abstract

A procedure for the preparation of a natural fruit-like product consisting of an alginate or pectate gel containing a fruit material in which an alginate or pectate sol, a source of calcium ions, such as calcium salts, are mixed chelated or sparingly soluble, and a fruit material, characterized in that the sun and the source of calcium ions are rapidly mixed with an edible acid, thereby releasing sufficient calcium ions to gel the mixture and allowing the mixture to gelitifies under conditions substantially free of shear.
