Abstract
本发明涉及一种模制并快速激冷食品最好为糖果的方法和设备。该方法包括下列步骤:a)将容易固化的食品(5)放置在一系列连结到激冷滚筒(3)上的模具(2)内,食品至少在模具内至少部分固化,b)转动激冷滚筒(3)以移动各模具,而在放置食品后使食品尽快与一传送带(6)接触以资防止模具从水平位置移动离开时食品外表面扭曲,及c)将至少部分固化的食品从模具内分离到传送带上。
Description
本发明涉及模制食品,特别是模制糖果如果冻、胶姆糖、高沸点糖、巧克力或油脂基食品。
食品特别是糖果曾用激冷滚筒来生产,如同US 5,078,204和GB641,682所示,但在这些专利中公开的方法是使用一对在表面上制有凹腔而相向旋转的激冷滚筒来形成由薄条连接起来的糖果的。GB641,982的目的只是用来生产巧克力糖果,存在着巧克力粘结在表面上的问题。而在US 5,078,204内,模制食品被制成固体带的形式,需要进一步加工。
本发明可克服上述模制糖果时生成连接薄条的问题,并可在模制后不再需要进一步加工。另外,本发明的目的是要提供一种新的方法和设备以资用较少的机械复杂性和较少数量的模具来模制并快速激冷食品,这样便可减少投资、场地空间、维修费用和改变模具形状的费用。
因此,本发明涉及食品模制方法,包括下列步骤:
a)将容易固化的食品顺次放置在一系列连结在激冷滚筒上的模具内,该食品在模具内至少部分固化;
b)转动激冷滚筒以移动各模具,而在放置食品后尽快使食品与一条传送带接触以资防止模具从水平位置移动离开时食品外表面扭曲;及
c)使至少部分固化的食品从可拆卸的模具上分离到传送带上。
按照本发明的这个实施例,传送带被布置成卷绕在模具的周边上,这样当模具移动离开水平位置时可防止所放食品的外表面沉陷。最好在模具相对于放置食品时的位置移动不到90度,最好小于60度时就使传送带与食品的外表面接触。在模具转动至少90度,最好至少120度,期间,传送带与模具保持接触,直至食品从模具上分离。
本发明的另一个实施例包括食品模制方法,包括下列步骤:
a)将容易固化的食品顺次放置在一系列连结在激冷滚筒上的模具内,在放置时将一激冷板下降到模具上,由此使食品在模具内至少部分固化;
b)转动激冷滚筒;及
c)使至少部分固化的食品从模具中分离。
按照本实施例,该方法包括在将食品放置到模具内时将一激冷板下降到模具上。如果使用这种激冷板,食品外表面将充分固化以抗拒沉陷,那么就可不需传送带。
按照这两种方法,可用推出装置使至少部分固化的食品从模具中分离,该推出装置包括将压缩空气引导到每一模具后面凹腔内或通过第一模具底部的空气喷嘴的装置。为了帮助食品从模具中取出,还可有选择地使用脱开剂。
所使用的食品可包括温热的液体糖果溶液或热固性的食物成分溶液如巧克力或高沸点糖。这样食品就容易固化并在与激冷滚筒表面上的模具接触时在与模具接触的表面上至少部分固化。在食品的外表面上就形成一层皮,即使在中心还没有固化,这层皮已可帮助固化的食品容易从模具中取出。
本发明特别适宜制造的食品有果冻、胶姆糖、高沸点糖、巧克力或其他油脂基糖果如干果糖,该干果糖最好在20℃到30℃固化。液体制品和滚筒的温度取决于制品的成分。
本发明还涉及用来模制食品的设备,该设备包括:
一个激冷滚筒;
连结在激冷滚筒上的一系列模具;
一个放置器,用来在水平位置上将容易固化的食品顺次放置到模具内;及
一条传送带,布置成在放置后尽快与模具中的食品外表面接触,在模具移动离开水平位置时食品外表面扭曲。
最好,该设备还具有推出装置,用来将至少部分固化的食品从模具内推出到传送带上。
本发明的另一个用来模制食品的设备的实施例具有:
一个激冷滚筒;
连结在激冷滚筒上的一系列模具;
一个放置器,用来在水平位置上将容易固化的食品顺次放置到模具内;及
在将食品放置到模具内时一块与模具接触的激冷板。
按照这个实施例的设备也可具有推出装置用来将至少部分固化的食品从模具内取出。
按照本发明的这两个实施例,一系列模具按径向被布置在激冷滚筒的外周上。所用模具最好为可单独从激冷滚筒上分离的可拆卸模具。按照本发明采用可拆卸模具能根据所用模具型式制出各种形状的食品。模具可由单独一个单元构成,具有多个在其内形成的以构成多个模具的凹腔,与激冷滚筒布置在同一轴线上,或者只是具有多个与激冷滚筒同轴布置的模具。当多个可拆卸模具与激冷滚筒同轴布置时,放置器被这样布置,即使食品同时放置到多个可拆卸模具中的每一个模具内。
每一单独模具都有大的表面面积与激冷滚筒接触为的是使热量能通过传导从模具传递到激冷滚筒上。模具和激冷滚筒都是由具有良好导热性能的材料制成的。
与传统的方法需要数千个模具相比,本发明能够使用较少数量的模具。这样便可减少必要的投资,而使用可取走的模具又可减少改变形状的费用。与传统方法相比场地空间也可大为减少。由于传导式的热传递的快速冷却能得到高的产出,并能减少制品在冷却时的改变如糖的转换。此外,机械复杂性的降低还可减少投资和维修费用。
下面本发明将以只是示例的方式结合附图作更详细的说明。
图1为实施本发明的方法的设备的一个实施例的略图。

图1示出用来实施按照本发明的食品1的模制方法的设备。该设备具有连结在激冷滚筒3上的一系列模具2。设有一个放置器4用来将容易固化的食品放置到模具内。
安排有电动机(未示出)使激冷滚筒3在所示的方向旋转。该滚筒可连续旋转,而放置器系统则使滚筒在水平方向上作往复运动,这样来在放置周期内得到模具和放置器的静定配置。另一种可选用的方法是使滚筒的运动与放置周期结合,使滚筒在放置周期内停止旋转,而在周期完毕后重新启动将一空的模具放到放置器下。
设有一条传送带6,在食品放置后使传送带尽快与模具中的食品接触以资防止在充填有食品的模具移动离开水平位置时食品的外表面发生扭曲。在被放置到模具内时食品至少部分固化,然后被最好为压缩空气的推出装置7推出到传送带上成为完成的形状1。
图2示出本发明的另一个实施例。该设备具有连结在激冷滚筒3上的一系列模具2。设有一个放置器4用来将容易固化的食品5逐一放置到可拆卸的模具内。还有一块激冷板12,每当食品被放置到模具内时激冷板12便与食品的外表面接触。安排有一台电动机(未示出)使激冷滚筒3如图所示旋转。食品5在被放置到模具内后至少部分固化,然后被最好为压缩空气的推出装置7从模具内推出成为完成的形状1。
有一传送带如图所示可用来收集推出后的模制食品。
在某些情况下,传送带能被用来使食品从模具内脱开。例如粘性的制品象高沸点糖或巧克力能粘结在传送带上,并能简单地取下,而不需应用推出装置。
图3示出通过图2中A-A线的剖面图。从这剖面图可以看到有多个模具2相对于激冷滚筒3同轴设置,而放置器被这样布置,即使食品同时被一系列单个放置器放置在多个模具中的每一个模具内。有一传送带如图所示可用来收集推出后的模制食品。
图4示出本发明的另一实施例,其中推出装置包括一条穿孔的传送带8,在传送带收集已模制食品的位置上可穿过该传送带抽出一个真空。传送带8包括多个均匀分布的小孔。该传送带沿着模具充分接近食品通过以资确保在有真空时食品能粘附在带上。真空是从位在与传送带接触食品的一侧相对的另一侧上的一个真空源9抽吸而成的。真空源具有一个带凹腔的真空室,其大小须能确保有一个适宜的真空分布在食品的接触表面上。每一次当模具停止在真空室的垂直位置上时,真空室都向上运动。按照滚筒的一个增量的运动能将放置周期和真空周期协调到同时进行。
图5示出另一个变型,其中推出装置具有一个铰接的臂10,该臂能被抽成真空,而真空的大小足够使食品从模具内取出并被转送到传送带上。
按照图4和5,真空是从外面抽吸的,而从模具冲出的压缩空气。也能与这种外部真空结合使用。
传送带可具有塑料的叠层片结构。该系列模具可由金属制成。滚筒缓慢旋转,对巧克力和油脂基糖果转送最好为1到4转/分。
最好滚筒被激冷到将空腔温度保持在约5到-25℃的范围内。滚筒由含有乙二醇/水混合物的冷却剂循环冷却,而模具通过将热传导到滚筒上被冷却。在激冷滚筒周围还需要进行空气调节以免水的凝结和水的形成。激冷板也是由冷却剂如水/乙二醇的混合物来循环冷却的。
食品可通过推出装置从模具内取出,推出装置可具有将压缩空气引导到每一模具后面的凹腔内或通过每一模具底部的空气喷嘴的装置。可采用脱开剂如食物级油来帮助从模具内脱开。
Claims (15)
1.一种模制食品的设备包括:
一个激冷滚筒;
连结在激冷滚筒上的一系列模具;
一个放置器,用来在水平位置上将容易固化的食品顺次放置到模具内;
一条传送带,布置成在放置后尽快与模具中的食品的外表面接触,以防止在模具移动离开水平位置时食品外表面扭曲。
2.权利要求1的设备,其特征为,当模具相对于放置食品时位置移动不到90度、最好小于60度时就安排传送带与食品的外表面接触。
3.权利要求1或2的设备,其特征为,在模具转动至少90度、最好至少120度期间,传送带始终保持与模具接触,一直到食品从模具上分离。
4.一种模制食品的设备包括:
一个激冷滚筒;
连结在激冷滚筒上的一系列模具;
一个放置器,用来在水平位置上将容易固化的食品顺次放置到模具内;及
在将食品放置到模具内时一块与模具接触的激冷板。
5.权利要求1到4中任一项的设备,还包括一个推出装置,用来将至少部分固化的食品从模具内推出。
6.权利要求5的设备,其特征为,推出装置包括用来将压缩空气引导到每一模具后面的凹腔内或通过每一模具底部的空气喷嘴的装置。
7.权利要求1到6中任一项的设备,其特征为,滚筒被激冷以保持5到-25℃的空腔温度。
8.权利要求1到7中任一项的设备,其特征为,模具可从激冷滚筒上取下。
9.一种模制食品的方法,包括下列步骤:
a)将容易固化的食品顺次放置在一系列连结在激冷滚筒上的模具内,该食品在模具内至少部分固化;
b)转动激泠滚筒以移动各模具,而在放置食品后尽快使食品与一条传送带接触以资防止模具从水平位置移动离开时食品外表面扭曲;及
c)使至少部分固化的食品从模具上分离到传送带上。
10.一种模制食品的方法,包括下列步骤:
a)将容易固化的食品顺次放置在一系列连结在激冷滚筒上的模具内,在放置时将一激冷板下降到模具上,由此使食品在模具内至少部分固化;
b)转动激泠滚筒;及
c)使至少部分固化的食品从模具中分离。
11.权利要求9或10的方法,其特征为,分离包括通过一个推出装置将至少部分固化的食品推出。
12.权利要求11的方法,其特征为,推出装置包括将压缩空气引导到每一模具后面的凹腔或通过每一模具底部的空气喷嘴的装置。
13.权利要求9到12中任一项的方法,其特征为,可使用脱开剂来帮助食品从模具内取出。
14.权利要求9到13中任一项的方法,其特征为,滚筒被激冷以保持5到-25℃的空腔温度。
15.权利要求9到14中任一项的方法,其特征为,食品为糖果,最好为巧克力或油脂基糖果。
