Abstract

Se revela un método y aparato para el moldeo y enfriamiento rápido de un producto alimenticio, de preferencia un producto de confitería. El métodocomprende los siguientes pasos: a) depositar un producto alimenticio solidificable en una serie de moldes unidos a un rodillo enfriado en donde el productoalimenticio se solidifica al menos parcialmente en el molde; b) hacer girar el rodillo enfriado para mover las series de moldes con producto alimenticio encontacto con una banda transportadora y suficientemente después de la deposicion para evitar la distorsion de la superficie exterior del producto alimenticioconforme el molde se separa de la horizontal y c) separar el producto alimenticio al menos parcialmente solidificado de los moldes de labanda transportadora.Una modalidad alternativa comprende un método para moldear un producto alimenticio que comprende los pasos de a) depositar un producto alimenticiosolidificable en forma secuencial en una serie de moldes unidos a un rodillo enfriado en donde una placa enfriada se coloca sobre el molde durante ladeposicion y en donde el producto alimenticio se solidifica al menos parcialmente en el molde, b) hacer girar el rodillo enfriado y c) separar el productoalimenticio al menos parcialmente solidificado de los moldes.
