本发明属于食品加工技术领域,具体涉及一种具有促钙吸收作用的灰树花多肽固体饮料及其制备方法。
背景技术
钙是机体内部不可或缺的重要元素,在人体骨骼生长、生理调节、肌肉收缩、神经调节、血液凝固、有丝分裂等过程中发挥着重要作用。缺钙会使人体进入亚健康状态,甚至会造成人体的许多疾病,近来虽然国内补钙产品越来越多,可是消费者缺钙的现象却没有得到根本的改善,究其原因主要在于钙的生物利用率低。造成了钙的生物利用率下降的原因是我国的食物来源是以植物性食物为主,其中的植酸、草酸和磷酸等成分在人体肠道中易与摄入的游离钙形成不溶性的钙盐。研究表明,多肽由于其独特的螯合体制和转运机制,使摄入的钙离子更易于被吸收且具有更快的吸收速度。因此,有一定生物功能的促钙吸收多肽具有很高的开发应用价值。
灰树花,又称贝叶多孔菌、千佛菌、栗子蘑、麻栗窝菌等,具有很高的营养价值和药用价值。灰树花是我国大面积栽培的食用菌,其蛋白质含量丰富,高达 31.5%,远高于香菇、银耳、金针菇、黑木耳等常见食用菌。灰树花氨基酸中必需氨基酸占45.5%,也高于一般食用菌。因而提取灰树花中的蛋白质,利用其水解产生的多肽与普通动植物蛋白相比具有更丰富的生物活性。利用生物技术对灰树花进行蛋白质资源的深加工,进行生物活性肽的筛选和提取分离,这种灰树花生物活性多肽能显著提高钙元素的吸收率和利用率,而且还具有抗氧化、抗菌、免疫调节、降血脂和降血糖等活性,有很高的开发价值和应用前景,同时能提高灰树花的附加值,为食药用菌资源的利用开辟了新的途径。

本发明目的在于提供一种具有促钙吸收作用的灰树花多肽固体饮料及其制备方法,其以灰树花为原料经科学配制而成,天然、营养,具有补充钙元素、抗衰老、提高免疫力等功效。
一种具有促钙吸收作用的灰树花多肽固体饮料,由4类配料以干重计按以下质量百分数配制而成:配料1灰树花水提物:40-50% ;配料2灰树花多肽20-30%;配料3无机钙:10-20%;配料4果粉:0-30%;上述4类配料的质量百分数之和为100%。
配料3无机钙包括碳酸钙、磷酸钙等,配料4果粉包括百香果粉、水蜜桃粉、草莓粉、蓝莓粉、芒果粉等。
一种具有促钙吸收作用的灰树花多肽固体饮料,其制备方法包括如下步骤:
(1)选取优质灰树花,按料液比1:20-1:40,水浴85-100℃,1-2h,过滤后,滤液喷雾干燥备用,
(2)将步骤(1)的滤渣,按料液比1:10-1:30配置灰树花溶液,1mol/L NaOH调 pH至7-8,加复合蛋白酶4%-6%进行酶解,封口53℃恒温反应4h-6h,沸水浴灭酶10 min,过滤取上清,浓缩后喷雾干燥得灰树花多肽备用,
(3)选取配料3中的1种备用,
(4)选取配料4中的1种备用,
(5)将步骤(1)-(4)预处理的配料以干重计按质量百分数比40-50%:20-30%:10-20%:0-30%混合均匀包装制得具有促钙吸收作用的灰树花多肽固体饮料。

大鼠的体重可以衡量生长状况变化。从表1可以看出,在0、2周时,各组体重无显著性差异(p>0.05);在第4周时可以看出,高剂量灰树花多肽+高剂量的CaCO3组的体重高于无机碳酸钙组(CaCO3),但和空白对照组(control)无显著性差异,低剂量灰树花多肽+低剂量碳酸钙组显著高于模型组(model)(p<0.05),但是却显著低于正常对照组(control)(p<0.05)。本实验中,灰树花多肽+高剂量的CaCO3组可以有效地改善缺钙老鼠的体重使其达到正常体重,说明灰树花多肽+高剂量的CaCO3组能促钙源的吸收利用,改善大鼠的体重。
表1中大鼠血清的生化变化。在第4周,不同处理下血清中磷水平没有统计学变化(p>0.05)。但血清 Ca 和血清碱性磷酸酶(ALP)活性发生了变化。用灰树花多肽+高剂量的碳酸钙组和CaCO3组喂养的大鼠血清 Ca 高于模型组(p<0.01)。但是灰树花多肽+高剂量的碳酸钙组和CaCO3组和对照组没有显著差异(p >0.05)。所述的灰树花多肽+高剂量的碳酸钙组、对照组和模型组相比血清 ALP 升高(p<0.01)。灰树花多肽+高剂量的碳酸钙组与对照组比较差异无统计学意义(p>0.05)。本实验说明,高剂量的灰树花多肽也可以促进摄入的碳酸钙的吸收,说明灰树花多肽具有良好的补钙效果。
以上所述仅为本发明的较佳实施例,凡依本发明申请专利范围所做的均等变化与修饰,皆应属本发明的涵盖范围。
Claims (6)
1.一种具有促钙吸收作用的灰树花多肽固体饮料,其特征在于,所述灰树花固体饮料由4类配料以干重计按以下质量百分数配制而成:配料1灰树花水提物:40-50% ;配料2灰树花多肽20-30%;配料3无机钙:10-20%;配料4果粉:0-30%;上述4类配料的质量百分数之和为100%。
2.根据权利要求1所述的具有促钙吸收作用的灰树花多肽固体饮料,其特征在于,配料3无机钙包括碳酸钙、磷酸钙中的一种或多种。
3.根据权利要求1所述的具有促钙吸收作用的灰树花多肽固体饮料,其特征在于,配料4果粉包括百香果粉、水蜜桃粉、草莓粉、蓝莓粉、芒果粉中的一种或多种。
4.根据权利要求1所述的具有促钙吸收作用的灰树花多肽固体饮料,其特征在于,所述灰树花水提物的制备方法为:选取优质灰树花,按料液比g/mL 1:20-1:40,水浴85-100℃,1-2h,过滤后,滤液喷雾干燥。
5.根据权利要求1所述的具有促钙吸收作用的灰树花多肽固体饮料,其特征在于,所述灰树花多肽的制备方法为:将制备灰树花水提物的滤渣按料液比g/mL 1:10-1:30配置灰树花溶液,1mol/L NaOH调 pH至7-8,加复合蛋白酶4%-6%进行酶解,封口53℃恒温反应4h-6h,沸水浴灭酶10 min,过滤取上清,浓缩后喷雾干燥得灰树花多肽。
6.一种制备如权利要求1所述的具有促钙吸收作用的灰树花多肽固体饮料的方法,其特征在于,将配料1-4以干重计按质量百分数比40-50%:20-30%:10-20%:0-30%混合均匀包装制得具有促钙吸收作用的灰树花多肽固体饮料。
