Abstract
本发明涉及一种饮料及饮料的生产方法,特别是利用啤酒生产原料生产的饮料。其特征在于这种饮料是利用啤酒生产中间品麦芽汁制成的饮料,它经过加悬浮剂、稳定剂、防腐剂、甜味剂、酸味剂等制成,其优点在于:采用麦芽汁作原料生产饮料,它含有多种营养成份及人体必须的18种氨基酸及多种微量元素和维生素,不仅具有清凉解渴作用,而且还具有补肾养肝,美容养颜,促进消化,调节人体微循环等作用,一年四季皆可饮用,同时,也给啤酒行业在市场竞争中提供了一条新路。

本发明涉及一种饮料及饮料的生产方法,特别是利用啤酒原料生产的饮料。
目前啤酒市场竞争处于炽热化阶段,为争夺市场,各厂家拼实力,降价倾销,企业名盈实亏。啤酒市场发展与徘徊共存。在此情况下,啤酒行业应当怎样找出一条发展新路,是企业改变目前困境的关键。饮料是夏春季消费者消费的一个主要产品,随着人们生活水平的逐步提高,一些高档、营养型的饮料逐步进入家庭,已成为一些家庭的经常消费产品。虽然目前市场上各种品牌,各种类型的饮料玲琅满目,但真正营养型的饮料还不是太多,仅具有解渴作用的饮料还是占多数。
本发明的目的是利用啤酒厂啤酒生产中间麦芽汁,经特殊工艺制成麦芽汁饮料,一是为饮料市场增加一个高档营养型饮料品种,二是为啤酒行业的发展开辟一条新路。
本发明是利用啤酒生产中糖化工序出来的麦芽汁制成的饮料,下面详细叙述本发明的生产方法。
本发明的生产方法是:麦芽汁→加卡拉胶煮沸90分钟→漩涡沉淀槽沉淀30分钟→薄板冷却至3--5℃→缓冲罐添加防腐剂、稳定剂及各种甜味剂和酸味剂→过滤→调配加碳酸水定容-→灌装、封口→巴氏杀菌→贴标装箱
为防止麦芽汁热凝固物析出,首先调整麦芽汁PH值至5.0每升麦芽汁加卡拉胶0.02g煮沸沉淀不小于90分钟,加入悬浮剂羧甲基纤维素CMCFH9;为防止各种病害微生物对饮料的污染,防腐剂采用苯甲酸钠、山梨酸钾、丹宁保鲜剂和CO2联合使用;为解决麦芽汁混浊问题,采用添加木瓜蛋白酶来解决,温度在65--70℃;为使口味更佳,甜味剂采用白砂糖、蜂蜜、甜味素,酸味剂采用柠檬酸和苹果酸,PH值在3.5--3.9。
本发明麦芽汁饮料生产各原料配比为:麦芽汁10--50%;悬浮剂用羧甲基纤维素CMCFH9,用量为0.1--0.2%;防腐剂苯甲酸钠0.15%,山梨酸钾0.10%,丹宁保鲜剂0.03%,CO20.4--0.5kg/cm3;稳定剂木瓜蛋白酶用量为10--20ppm,甜味剂白砂糖3--4%,蜂蜜0.5--1%,甜味素0.3--0.5%;酸味剂柠檬酸1.5--1.8%,苹果酸0.15--0.3%,其余部分为处理过的水。
本发明配料的机理是:因麦芽汁主要成分是大分子糖类及高分子蛋白质,稳定性较差,不经特殊工艺处理的麦芽汁,一般情况下30分钟可看到高分子热凝固物析出,24小时以内可看到较多的大分子沉淀物,通常利用酵母发酵转化成低分子易溶解的脂、醇、醛、酸等小分子物质。要在不加酵母发酵情况下,保证麦芽汁不沉淀,首先需调整麦芽汁PH值在5.0左右,加麦芽汁澄清剂卡拉胶煮沸沉淀然后加入悬浮剂,如琼酯、明胶、羧甲基纤维素CMCFH9等,经试验选用羧甲基纤维素CMCFHG9口味最好,且稳定性亦较好。因啤酒厂生产饮料最大的潜在天敌是酵母菌和野生酵母菌及各种病害微生物,而麦芽汁是这些微生物的高营养培养基,一旦感染各种微生物中的一种,麦芽汁饮料很快就变坏、变味、混浊、沉淀而不能饮用,经试验选用联合防腐剂即苯甲酸钠、山梨酸钾、丹宁保鲜剂和CO2,可起到很好的防腐作用。为防止饮料混浊沉淀,选择木瓜蛋白酶作稳定剂,分解小分子蛋白,保证饮料的稳定性。作为一种高档饮料营养是重要的一方面,但口味也是很重要的,如甜度和酸度要适中,才会受消费者欢迎。所以采用混合甜味剂和酸味剂,甜味剂选以白砂糖为主,加少量甜味素和蜂蜜,酸味剂选柠檬酸加苹果酸调配。
本发明的饮料优点在于:由于采用麦芽汁作原料,所以饮料属一种高档营养型饮料,它含有碳水化合物,已糖、蔗糖、麦芽糖、糊精,而且含氮物质丰富,还含有人体必须的18种氨基酸,多种微量元素、钾钠、钙、镁、锌及微生素B1、B2、B6和维生素C,具有清凉解渴、补肾养肝、溢气生发、美容养颜、促进消化、调节人体微循环等功效。因饮料中含有泡沫,新奇独特,口味柔和协调,四季皆宜,同时,也给啤酒行业在目前越来越激烈的市场竞争中提供了一条新路。
Claims (2)
1.天然麦芽汁饮料的生产方法,其特征是:首先将麦芽汁调PH值至5.0,每升麦芽汁加入0.02克卡拉胶,煮沸沉淀90分钟,将煮沸沉淀后的麦芽汁经薄板冷却至3-5℃,在缓冲罐中添加悬浮剂羧甲基纤维素CMCFH9,防腐剂苯甲酸钠、山梨酸钾和啤酒抗氧化保鲜剂,稳定剂木瓜蛋白酶,甜味剂白砂糖、甜味素和蜂蜜,酸味剂柠檬酸和苹果酸,再进行过滤,过滤之后加碳酸水定容,最后灌装、封口、巴氏杀菌和贴标装箱。
2.根据权利要求1所述的天然麦芽汁饮料的生产方法,其特征是:各组份占成品饮料的重量百分数为:麦芽汁为10-50%,羧甲基纤维素CMCFH9为0.1-0.2%,苯甲酸钠为0.15%,山梨酸钾为0.10%,啤酒抗氧化保鲜剂0.03%,术瓜蛋白酶为15-20PPm,白砂糖3-4%,蜂蜜0.5-1%,甜味素0.3-0.5%,柠檬酸1.5-1.8%,苹果酸0.15-0.3%,其余为处理过的水。
