技术领域
本发明涉及用于对低脂肪食品、特别是脂肪含量与通常的食品相比被降低了的低脂肪食品或去油食品的风味赋予油脂感、即类似脂肪的浓厚感或浓醇感的风味改善剂。
背景技术
近年来,由于饮食生活的欧美化、加工食品和预制食品的多样化、餐饮业的蓬勃发展、畜肉制品和油脂制品的获得变得容易、压力的增加等,在饮食生活中热量或脂肪的摄取存在增加的趋势。特别是脂肪的过量摄取被认为是肥胖、内脏脂肪的积聚、心脑血管障碍等的原因,降低脂肪摄取量作为课题受到关注。食品工业界也基于这样的背景,为了应对健康意识的提高、消费者需求的多样化等,对于低热量、低脂肪、脱脂食品等的开发的关注度越来越高。基于这些需求,在涉及食品工业的各种领域中,进行着使脂肪含量与以往相比降低了的商品的开发。然而,现状是脂肪对于食品本身的美味有很大的贡献,对于使脂肪含量与以往相比降低了的低脂肪或脱脂食品而言,其风味清淡,浓醇感弱,来源于脂肪的类似脂肪的浓厚感或浓醇感也弱,无法充分满足消费者的嗜好。
迄今为止,为了解决这些课题也进行了各种各样的努力,例如提出了,在降低了油脂含量的低脂肪食品中,使规定量的具有加热熔融性的凝胶分散于食品组织内的低脂肪食品(专利文献1);含有菊粉和糊精的油脂替代组合物(专利文献2);将热变性乳清蛋白和特定的糊精掺合到脂肪或油脂成分减少了的饮食品中的方法(专利文献3);将乳液的平均粒径为2μm~15μm的水包油型乳化油脂掺合到使用了比以往更为少量的油脂的食品中的方法(专利文献4);包含甘油二酯的呈味改善剂,该甘油二酯是以特定的比例掺合由较短链的脂肪酸形成的甘油二酯和由较长链的脂肪酸形成的甘油二酯而得的(专利文献5);包含特定的三肽(γ-Glu-Val-Gly或γ-Glu-Abu-Gly)的脂肪含量被降低了的低脂肪食品用的呈味改善剂(专利文献6);将特定的内酯类作为有效成分的油脂感增强剂(专利文献7);将煎炸油进行水蒸气蒸馏而得的风味增强剂(专利文献8)等。
然而,现状是由上述专利文献记载的发明带来的效果不一定令人满意,仍未开发出对脂肪含量与通常的食品相比被降低了的低脂肪食品的风味赋予充分的油脂感的方法。

发明内容
发明所要解决的技术问题
本发明的课题是提供对于脂肪含量与通常的食品相比被降低了的低脂肪食品或去油食品,仅通过微量添加,就可赋予让人想起使用了与通常的食品为同等程度的脂肪的情形的、类似脂肪的浓厚感或浓醇感这样的风味的风味改善剂、特别是油脂感增强剂。
解决技术问题用的手段
香料化合物通常为挥发性,是刺激嗅觉的化合物,但其种类极多。另一方面,食物的风味被认为是嗅觉刺激和味觉刺激通过脑综合而得的感觉。即,由一定化合物产生的嗅觉刺激与刺激味觉的化合物(食盐、砂糖、谷氨酸钠等)组合,给食品整体带来特有的风味。近年来,在具有香气的化合物中对同时刺激嗅觉和味觉的化合物的探索很多,被用于饮食品的综合的风味的提高。上述专利文献7和8中记载的发明以往也被认为是仅刺激嗅觉的化合物(或混合物),专利文献7和8被认为作为风味作用(或风味方面的作用)发现了油脂感增强作用。
于是,本发明人认为,在数量极多的香料组合物中,应该会存在更强力且良好地增强油脂感的化合物,认真探索了增强油脂感的化合物。其结果是,作为对脂肪含量与通常的食品相比被降低了的低脂肪食品或去油食品赋予类似脂肪的浓厚感或浓醇感的化合物,发现了(E)-6-辛烯醛,从而完成了本发明。
由此,本发明提供以下的发明,
(1)低脂肪食品用的风味改善剂,其中,将(E)-6-辛烯醛作为有效成分;
(2)风味得到改善的低脂肪食品,其中,含有(1)的风味改善剂;
(3)低脂肪食品的风味改善方法,其中,通过将(1)的风味改善剂掺合到低脂肪食品中来进行;
(4)低脂肪食品用的风味改善剂组合物,其中,含有(1)的风味改善剂;
(5)如(4)的风味改善剂组合物,其中,还含有选自2,4-癸二烯醛、(E)-2-壬烯醛、反式-4,5-环氧-2(E)癸烯醛、壬烯醛、棕榈酸、油酸、己酸、癸酸、辛酸、δ-癸内酯、δ-十二内酯和(Z)-4-羟基-6-十二烯酸内酯中的1种以上;
(6)风味得到改善的低脂肪食品,其中,含有(4)或(5)的风味改善剂组合物;
(7)低脂肪食品的风味改善方法,其中,通过将(4)或(5)的风味改善剂组合物掺合到低脂肪食品中来进行;
(8)如(1)的风味改善剂,其中,风味改善是油脂感的增强;
(9)如(4)或(5)的风味改善剂组合物,其中,风味改善是油脂感的增强;
(10)如(1)的风味改善剂,其中,低脂肪食品是脂肪含量被降低了的低脂肪食品;
(11)如(4)或(5)的风味改善剂组合物,其中,低脂肪食品是脂肪含量被降低了的低脂肪食品;
(12)如(1)的风味改善剂,其中,低脂肪食品是去油食品;
(13)如(4)或(5)的风味改善剂组合物,其中,低脂肪食品是去油食品。
发明的效果
如果采用本发明,仅通过向脂肪含量与通常的食品相比被降低了的低脂肪食品或去油食品中微量添加本发明的风味改善剂或风味改善剂组合物,就可赋予让人想起使用了与通常的食品为同等程度的脂肪的情形的油脂感。该油脂感是指例如类似脂肪的浓厚感、类似脂肪的浓醇感这样的风味方面的感觉特性。
具体实施方式
本发明的低脂肪食品用的风味改善剂的有效成分即(E)-6-辛烯醛作为香料化合物已经公知,已知可添加1~25ppm至乳制品、油脂食品、水果加工品、蔬菜加工品、糕点、谷类食品、烘培制品、肉制品、鱼贝类制品、蛋加工品、甜味剂、汤、酒精饮料、非酒精饮料等各种饮食品中(EFSA Journal 2011;9(11):2397,p.22,p.27,p.44(表II.1.1),p.45(表II.1.2))。然而,这些文献中虽然记载了(E)-6-辛烯醛可作为香料使用,但完全未记载可对脂肪含量与通常的食品相比被降低了的低脂肪食品或去油食品赋予油脂感。
此外,本申请人将该化合物作为“硬化油风味赋予剂”进行了专利申请(日本特开2014-200236号),获得了专利授权,拥有专利权(日本专利第5863697号)。该硬化油风味赋予剂涉及的发明是通过向不含硬化油或减少了硬化油的油脂、或者掺合了所述油脂的油脂食品中添加微量(10ppt~10ppb)的(E)-6-辛烯醛,从而可赋予使人想起硬化油(氢化的油脂)的风味的发明。即,日本特开2014-200236中有关于向作为油脂使用以除硬化油以外的油脂为主体的油脂食品(人造奶油或涂抹脂肪(fat spread))中添加(E)-6-辛烯醛的情形的风味的记载,但关于“向脂肪含量与通常的食品相比被降低了的低脂肪食品中微量添加(E)-6-辛烯醛的情况下,该食品被赋予类似脂肪的浓厚感、浓醇感,风味得到改善”,完全没有记载。
应予说明,关于本发明的化合物的几何异构体即(Z)-6-辛烯醛,也作为香料化合物已经公知,例如提出了在香水化妆品香料或者香水化妆品制品中的使用(美国专利第4192781号、美国专利第4132675号公报)。这些美国专利中示出了(Z)-6-辛烯醛具有类似脂肪、类似肥皂、类似蔬菜(グリ一ン樣)、类似水果的香气,也能够作为香料(flavour)使用。而且,记载了(Z)-6-辛烯醛具有类似蔬菜、甜瓜的香气特性(J.Am.Oil Chem.Soc.,58(6),680-682(1981)),(Z)-6-辛烯醛还能用作乳风味增强剂(日本特开2003-189)。然而,这些文献中完全未看到关于(Z)-6-辛烯醛的几何异构体即(E)-6-辛烯醛的记载,也完全未看到关于其香气特性的记载。
作为本发明的有效成分的(E)-6-辛烯醛可以采用气相色谱分离法(分取ガスクロマトグラフィ一)从6-辛烯醛的几何异构体混合物中分离得到,另外,例如还可以根据J.Am.Chem.Soc.,86,1964,3759-3767中记载的方法利用合成而获得。
本发明涉及低脂肪食品用的风味改善剂,其中,将(E)-6-辛烯醛作为有效成分。对于本发明的有效成分即(E)-6-辛烯醛而言,通过作为(E)-6-辛烯醛以通常为1ppt~1ppm、较好是2ppt~100ppb、更好是10ppt~10ppb、进一步更好是20ppt~5ppb、特别好是50ppt~2ppb的范围添加到低脂肪食品中,从而可改善风味。作为被改善的风味,特别是油脂感的增强,可赋予类似脂肪的浓厚感、类似脂肪的浓醇感。
在(E)-6-辛烯醛相对于低脂肪食品的添加浓度低于1ppt的情况下,风味改善的效果不足;此外,如果(E)-6-辛烯醛相对于低脂肪食品的添加浓度超过1ppm,则(E)-6-辛烯醛特有的类似醛的气味变得突出,不理想。
本发明中所说的低脂肪食品特别地是指,脂肪含量与通常的食品的脂肪含量相比被降低了的低脂肪食品或去油食品。脂肪含量与通常的食品的脂肪含量相比被降低了的低脂肪食品是指,对于某食品以从通常所具有的范围的脂肪含量明显降低了的形态进行制造而得的食品。有时也采用“低脂肪”、“脂肪成分减少○○%”等表述。此外,作为脂肪含量与通常的食品相比被降低了的低脂肪食品,可例示所述食品中脂肪含量为通常食品的脂肪含量的2/3~1/3的食品。作为这里所说的“通常的脂肪含量的食品”,具体可例举后述的各种食品中不具有如上所述的表述的市售品作为代表性的例子。
如果对“通常的脂肪含量的食品”进行例示,例如对于“牛奶”而言,在与乳及乳制品的成分标准等相关的部令(乳等部令)中规定为脂肪含量3.0%以上,通常的市售品几乎均为3.5%以上。应予说明,在乳等部令中,乳脂肪成分0.5%以上且1.5%以下的制品被分类为“低脂肪牛奶”,仅调整乳脂肪成分而乳脂肪成分低于0.5%的制品被分类为“脱脂牛奶”。
此外,例如对于“冰淇淋”而言,针对冰淇淋(ice cream)、乳冰(lacto ice)、冰冻乳(ice milk),根掘乳等部令规定为,冰淇淋:乳固体成分15.0%以上(其中乳脂肪成分8.0%以上)、冰冻乳:乳固体成分10.0%以上(其中乳脂肪成分3.0%以上)、乳冰(乳固体成分3.0%以上),市售品中,冰冻乳和乳冰大多使用植物油脂,冰淇淋、冰冻乳、乳冰均大多含有8~16%左右的脂肪。
此外,例如对于“调味品”而言,根据日本农林标准(JAS标准),对油脂含量进行了规定,规定为蛋黄酱:65%以上、色拉奶状调味品(salad creamy dressing):10%以上且低于50%、蛋黄酱及色拉奶状调味品以外的半固体状调味品:10%以上、乳液状调味品及分离液状调味品:10%以上。
此外,去油食品是指相对于每100g(饮料为100ml)食品的可食用部分,脂质低于0.5g(目前,去油调味品的情况下为低于3.0g),有时也采用脱脂、零脂肪、少油等表述。
这些脂肪含量与通常的食品的脂肪含量相比被降低了的低脂肪食品或去油食品,与具有通常的脂肪含量的同一食品相比,通常在其风味方面缺少类似脂肪的浓厚感、类似脂肪的浓醇感。
如果采用本发明,通过向脂肪含量与通常的食品的脂肪含量相比被降低了的低脂肪食品或去油食品中掺合所述添加量的(E)-6-辛烯醛,从而可赋予类似脂肪的浓厚感、类似脂肪的浓醇感、类似脂肪的顺滑感这样的特征性风味。
将(E)-6-辛烯醛添加至所述低脂肪食品中时,如前所述,理想的是,(E)-6-辛烯醛的添加量为极微量,且在特定的范围内,所以较好是为了便于使用而制备为低脂肪食品用的风味改善剂组合物。对于风味改善剂组合物而言,以该风味改善剂组合物的质量为基准,能以通常为0.1ppb~1000ppm、较好是1ppb~500ppm、更好是5ppb~200ppm、进一步更好是20ppb~50ppm的范围内的浓度含有上述(E)-6-辛烯醛。另外,将该低脂肪食品用的风味改善剂组合物以相对于低脂肪食品为约0.001%~1%左右进行添加。其结果是,如果使用所述的风味改善剂组合物,则容易向低脂肪食品中按照所述浓度掺合。
本发明的低脂肪食品用的风味改善剂组合物中,除了含有(E)-6-辛烯醛之外,还可含有选自2,4-癸二烯醛、(E)-2-壬烯醛、反式-4,5-环氧-2(E)癸烯醛、壬烯醛、棕榈酸、油酸、己酸、癸酸、辛酸、δ-癸内酯、δ-十二内酯和(Z)-4-羟基-6-十二烯酸内酯中的1种以上的香料。由此,可对低脂肪食品进而赋予具良好特征的风味,即类似脂肪的浓厚感、类似脂肪的浓醇感。
对于(E)-6-辛烯醛与前述的其它香料的比率而言,将选自2,4-癸二烯醛、反式-2-壬烯醛、壬烯醛、棕榈酸、油酸、己酸、癸酸、辛酸、δ-癸内酯、δ-十二内酯和(Z)-4-羟基-6-十二烯酸内酯中的1种以上记为A成分的情况下,以质量为基准,可以是((E)-6-辛烯醛)/A=0.001~100、较好是0.01~10的范围内;此外,((E)-6-辛烯醛)/反式-4,5-环氧-2(E)-癸烯醛=0.001~1000、较好是0.01~100的范围内。
本发明的低脂肪食品用的风味改善剂组合物中,可根据需要进而包含通常的香料化合物,可例举例如甲酸、丙酸、丁酸、戊酸、异戊酸、己酸、反式-2-己烯酸、庚酸、辛酸、壬酸、5-羟基壬酸、癸酸、2-癸烯酸(デセン酸)、4-癸烯酸、5-癸烯酸、6-癸烯酸、9-癸烯酸、5-羟基癸烯酸、5-羟基十一烷酸、月桂酸、5-羟基十二烷酸、肉豆蔻酸、十五烷酸、异十五烷酸、棕榈酸、十七烷酸、硬脂酸、油酸、亚油酸、亚麻酸等酸类;乙醛、丙醛、丁醛、2-丁烯醛、己醛、辛醛、4-庚烯醛、2,4-辛二烯醛、壬醛、2-壬烯醛、2,4-壬二烯醛、2,6-壬二烯醛、癸醛、2,4-癸二烯醛、十一醛、2,4-十一碳二烯醛、月桂醛、苯甲醛、香草醛、乙基香草醛、糠醛等醛类;甲酸乙酯、乙酸乙酯、乙酸丁酯、乙酸异戊酯、乙酸癸酯、乙酸十二烷酯、乙酸苯乙酯、乳酸乙酯、丁酸乙酯、2-甲基丁酸乙酯、3-乙基丁酸乙酯、戊酸甲酯、己酸甲酯、己酸乙酯、庚酸甲酯、庚酸乙酯、辛酸乙酯、辛酸异戊酯、辛酸庚酯、壬酸甲酯、壬酸乙酯、癸酸甲酯、癸酸乙酯、十一烷酸乙酯、月桂酸甲酯、月桂酸乙酯、肉豆蔻酸乙酯、棕榈酸乙酯、水杨酸甲酯、琥珀酸二乙酯、癸二酸二乙酯、5-羟基己酸乙酯、5-羟基癸酸乙酯、5-羟基十一烷酸乙酯、5-羟基癸酸丙酯、5-羟基癸酸异丙酯、5-羟基辛酸2-甲基丙酯、5-羟基-9-甲基癸酸乙酯等酯类;乙醇、丙醇、丁醇、戊醇、己醇、庚醇、辛醇、壬醇、癸醇、苄醇、苯乙醇、糠醇等醇类;2-庚酮、2-辛酮、3-辛酮、1-辛烯-3-酮、2-壬酮、3-壬酮、8-壬烯-2-酮、2-十一烷酮、2-十三烷酮、乙偶姻、5-羟基-4-辛酮、二乙酰、2,3-戊二酮、2,3-己二酮、2,3-庚二酮、乙酰基异戊酰、对甲氧基苯乙酮、二苯甲酮、麦芽酚等酮类;3-羟基-2-甲基-4H-吡喃-4-酮、2-乙基-3-羟基-4H-吡喃-4-酮、2,5-二甲基-4-羟基-3(2H)-呋喃酮、3-甲基-1,2-环戊二酮、3-乙基-1,2-环戊二酮、3,4-亚甲二氧基苯甲醛、3-羟基-4,5-二甲基-2(5H)-呋喃酮、5-乙基-3-羟基-4-甲基-2(5H)-呋喃酮、2-乙基-4-羟基-5-甲基-3(2H)-呋喃酮、3,4-二甲基-1,2-环戊二酮等含氧环状化合物类;邻氨基苯甲酸苯乙酯、三甲胺、吲哚、3-甲基吲哚、吡啶、异喹啉、吡嗪、甲基吡嗪等含氮化合物类;甲硫醇、异丁硫醇、2,4-二硫杂戊烷(2,4-ヅチァペンン)、二甲基硫醚、二甲基二硫醚、2,4-二硫杂戊烷、二甲基三硫醚、二甲亚砜、二甲砜、甲硫醇、甲磺酰甲烷、异硫氰酸甲酯、异硫氰酸乙酯、异硫氰酸烯丙酯、2-甲基-3-丁硫醇、菠萝醛(mcthional)、硫代乙酸乙酯、硫代丁酸甲酯、3-丁烯基异硫氰酸酯、2-甲基噻吩、苯并噻唑、4-甲基-5-羟乙基噻唑(Sulfurol)、乙酰乳酸硫代甲酯(ァセチル乳酸チオメチルエステル)、丙酰乳酸硫代甲酯、丁酰乳酸硫代甲酯、戊酰乳酸硫代甲酯、2-甲基丁酰乳酸硫代甲酯、癸酰乳酸硫代甲酯、乙酰乳酸硫代乙酯、丙酰乳酸硫代乙酯、丁酰乳酸硫代乙酯、戊酰乳酸硫代乙酯、异己酰乳酸硫代丙酯等含硫化合物类;γ-己内酯、γ-庚内酯、γ-辛内酯、γ-壬内酯、γ-癸内酯、7-癸烯-4-内酯(4-羟基-7-癸烯酸内酯)、3-甲基-4-癸烯-4-内酯、3-甲基-5-癸烯-4-内酯、γ-十一内酯、γ-十二内酯、γ-十三内酯、γ-十四内酯、δ-己内酯、2-己烯-5-内酯、2-庚烯-5-内酯、δ-辛内酯、2-辛烯-5-内酯、4-甲基-5-辛内酯、δ-壬内酯、2-壬烯-5-内酯、4-甲基-5-壬内酯、δ-癸内酯、2-癸烯-5-内酯、4-甲基-5-癸内酯、δ-十一内酯、2-十一烯-5-内酯、4-甲基-5-十一内酯、δ-十二内酯、2-十二烯-5-内酯、4-甲基-5-十二内酯、δ-十三内酯、2-十三烯-5-内酯、4-甲基-5-十三内酯、δ-十四内酯、2-十四烯-5-内酯、2-十五烯-5-内酯、2-十六烯-5-内酯、2-十七烯-5-内酯、2-十八烯-5-内酯、2-十九烯-5-内酯、2-二十烯-5-内酯、ε-癸内酯等内酯类等,但并不仅限于这些化合物。
本发明的低脂肪食品用的风味改善剂组合物中,以本发明的低脂肪食品用的风味改善剂组合物的质量为基准,能以通常为0.001~50质量%、较好是0.1~15质量%、更好是1~5质量%的范围内的浓度含有上述香料化合物。
另外,本发明的低脂肪食品用的风味改善剂组合物中还可适当掺合例如维生素E等抗氧化剂、香辛料提取物等可用于食品的成分。
此外,所述低脂肪食品用的风味改善剂组合物中,可根据需要掺合通常所使用的定香剂(fixative),例如水、乙醇、乙二醇、1,2-丙二醇、甘油、苯甲酸苄酯、柠檬酸三乙酯、氢化松香酸甲酯(Hercolyn)、动植物油、中链脂肪酸甘油三酯(MCT)、脂肪酸甘油二酯等。
此外,还可在所述低脂肪食品用的风味改善剂组合物中掺合例如皂树皮提取物、酶处理卵磷脂、蔗糖脂肪酸酯、聚甘油脂肪酸酯、甘油脂肪酸酯、阿拉伯胶等乳化剂或稳定剂的1种以上,使用例如均相混合机、胶体磨、高压均化器等进行乳化,从而制成乳化制剂的形态。所述乳化剂或稳定剂的使用量根据乳化剂或稳定剂的种类等而不同,例如,以乳化制剂的质量为基准,可例举0.1~25重量%的范围、较好是5~20重量%的范围内。
另外,例如还可向所述乳化制剂中适当掺合砂糖、乳糖、葡萄糖、海藻糖、纤维二糖、糖稀、还原糖稀等糖类、糖醇类、糊精等各种淀粉分解物及淀粉衍生物、淀粉、明胶、阿拉伯胶等天然胶类等赋形剂后,通过例如喷雾干燥、真空干燥等适当的干燥手段进行干燥,制成粉末制剂的形态。这些赋形剂的掺合量可根掘粉末制剂所需的特性等适当选择。
利用这样得到的本发明的低脂肪食品用的风味改善剂组合物,赋予了作为其风味的类似脂肪的浓厚感、类似脂肪的浓醇感、类似脂肪的顺滑感等的低脂肪食品的例子,可例示例如低脂乳、豆奶、乳饮料、含乳咖啡饮料、含乳红茶饮料、乳酸菌饮料、可可等普通饮料;含乳化油脂的涂抹食品(spread)、咖啡用奶、人造奶油等乳替代制品类;酸奶、果冻、布丁、慕斯(mousse)等甜品类;奶油霜或鲜奶油等奶油类;包括各种蛋糕或夹馅面点等西式点心和日式点心在内的烘烤点心或蒸制点心等加工点心类;冰淇淋、冰冻乳、乳冰等冷冻点心类;牛奶巧克力等巧克力类;口香糖、硬糖、牛轧糖、豆形胶质软糖(jelly beans)等普通点心;甜面包(菓子パン)等面包类;味噌、酱油、汤汁(だレ)、调味品、蛋黄酱、氨基酸系调味料、核酸系调味料、酸味调味料、发酵调味料、猪肉提取物、鸡肉提取物、鱼贝提取物、酵母提取物、蛋白水解物、鱼露、豆瓣酱、鱼干类(魚節類)、海带汤汁、高汤、中式调味品(中華の素)、烤肉调料汁、咖喱糊、炖汤调料(シチユ一の素)、汤调料(ス一プの素)、肉汤调料(ダシの素)、复合调味料等、面类(荞麦面条、乌冬、拉面、意大利面等)的浇汁等调味料类;荞麦面条、乌冬、拉面、意大利面等面类;用于烤肉、烤鸡、烤鳗鱼片等的调料汁或番茄酱等酱汁类;玉米汤、清汤、蛋汤、浓汤、昧噌汤等汤类;火腿、香肠、奶酪等畜产加工品;圆筒状鱼糕、蟹肉棒(カニカマ)、鱼糕等水产糜制品;杀菌袋装食品类;薯片、薄脆饼干、米饼、曲奇饼等零食类;甜烹海味、家常菜、冷冻食品、炖菜、油炸食品、烤制品等,但并不仅限于这些例子。
以下,通过实施例对本发明进行更具体的说明。
实施例
(实施例1)
制备(E)-6-辛烯醛的1000ppm乙醇溶液(本发明品1),向市售低脂乳(乳脂肪成分1.0%)中按照表1的浓度添加(E)-6-辛烯醛。
(感官评价)
对于添加了实施例1的(E)-6-辛烯醛的低脂乳和无添加品,由10名经过良好训练的评价人员对油脂感进行了感官评价。应予说明,油脂感是指例如类似脂肪的浓厚感、类似脂肪的浓醇感、类似脂肪的顺滑感这样的风味方面的感觉特性。
低脂乳的油脂感的评分标准:
对照(无添加):0分
与对照相比,油脂感极微地增强:2分
与对照相比,油脂感稍微增强:4分
与对照相比,油脂感略有增强:6分
与对照相比,油脂感增强且强烈感觉到类似脂肪的浓厚感、类似脂肪的浓醇感:8分
与对照相比,油脂感大幅增强且非常强烈地感觉到类似脂肪的浓厚感、类似脂肪的浓醇感:10分
与对照相比,稍稍感觉到生腥的金属气味,平衡稍差:-2分
与对照相比,生腥的金属气味过强,平衡差:-4分
其平均的评价结果示于表1。

如表1所示,显示通过向低脂乳中在1ppt~1ppm的范围内添加(E)-6-辛烯醛,从而油脂感增强。作为(E)-6-辛烯醛的添加量(浓度),向低脂乳中在1ppt~1ppm的范围内添加时确认到效果,通过在较好是2ppt~100ppb、更好是10ppt~10ppb、进一步更好是20ppt~5ppb、特别好是50ppt~2ppb的范围进行添加,从而确认到可更有效地增强油脂感。应予说明,以100ppb~1ppm添加时,以稍微~一些的程度感觉到(E)-6-辛烯醛特有的类似醛的气味,但并没有到特别在意的程度。如果进一步增加添加量而添加5ppm,则评价为感觉到(E)-6-辛烯醛特有的类似醛的气味,作为气味整体的平衡不好。
(实施例2)
制备向乙醇中分别溶解1000ppm的(E)-6-辛烯醛和1000ppm的表2所示的香料化合物而得的溶液(本发明品2~13)。

将本发明品1~13向市售低脂乳(乳脂肪成分1.0%)中分别添加0.0002%。将这些作为表3所示的本发明品14~26,由经过良好训练的评价人员对油脂感进行了感官评价。其平均的评价结果示于表3。应予说明,感官评价的标准如下,油脂感是指例如类似脂肪的浓厚感、类似脂肪的浓醇感这样的风味方面的特性、类似脂肪的顺滑感这样的感觉特性。

如表3所示,仅添加(E)-6-辛烯醛的低脂乳的油脂感很大地增强,但除了添加(E)-6-辛烯醛之外还添加2,4-癸二烯醛、(E)-2-壬烯醛、反式-4,5-环氧-2(E)癸烯醛、壬烯醛、棕榈酸、油酸、己酸、癸酸、辛酸、δ-癸内酯、δ-十二内酯或(Z)-4-羟基-6-十二烯酸内酯中的任一种的低脂乳均评价为油脂感大幅增强,对于油脂感增强确认到与(E)-6-辛烯醛的协同效果。
(比较例1)柠檬香精(柠檬精油)的制备
将600g乙醇与400g水混合而制成混合溶剂。向其中加入100g意大利产柠檬冷压油,在25±2℃进行10分钟的搅拌萃取。静置1小时后,采集下层(萃取溶剂层),在冰箱中冷却至4℃(静置16小时),在维持4℃的温度的状态下,使用在No.2滤纸(8cm)上预先被覆了10g纤维素粉末的布氏漏斗以一定压力进行抽滤(真空度13.33kPa),获得971g澄清的滤液(比较品1)。
(实施例3)
向比较品1中添加2ppm的(E)-6-辛烯醛,作为本发明品27。
(实施例4)向去油调味品中的添加及感官评价
以表4所示的配方将原料均匀混合,制备含有5%酱油的去油型调味品(本发明品28或比较品2)。

对于它们,由10名经过良好训练的评价人员对油脂感进行了感官评价。其结果是,10名评价人员全部评价为本发明品28与比较品2相比,强烈地具有类似脂肪的浓厚感、类似脂肪的浓醇感、类似脂肪的顺滑感这样的风味方面的感觉特性,油脂感大幅增强。
(比较例2)酸奶香料的制备
按照表5的配方来制备酸奶香料(比较品3)。

向比较品3中添加2ppm的(E)-6-辛烯醛,作为本发明品29。
(实施例6)向零脂肪酸奶中的添加及感官评价
向市售零脂肪酸奶中分别添加了0.1%本发明品29或比较品3(以酸奶中的(E)-6-辛烯醛浓度计为2ppb)。对于这些零脂肪酸奶,由10名经过良好训练的评价人员对油脂感进行了感官评价。其结果是,10名评价人员全部评价为添加了本发明品29的零脂肪酸奶与添加了比较品3的零脂肪酸奶相比,强烈地具有类似脂肪的浓厚感、类似脂肪的浓醇感、类似脂肪的顺滑感这样的风味方面的感觉特性,油脂感大幅增强。
(实施例7)向低脂肪蛋黄酱中的添加及感官评价
向市售低脂肪蛋黄酱(来自于脂肪的热量为通常的蛋黄酱的1/3)中添加0.1%本发明品1,混合均匀。
对于添加本发明品1和未添加本发明品1的低脂肪蛋黄酱,由10名经过良好训练的评价人员对油脂感进行了感官评价。其结果是,10名评价人员全部评价为添加了本发明品1的低脂肪蛋黄酱与未添加本发明品1的低脂肪蛋黄酱相比,强烈地具有类似脂肪的浓厚感、类似脂肪的浓醇感、类似脂肪的顺滑感这样的风味方面的感觉特性,油脂感大幅增强。
(实施例8)向低脂肪乳冰(lacto ice)中的添加及感官评价
向市售低脂肪乳冰(来自于脂肪的热量为通常的乳冰的50%)中添加0.1%本发明品1,混合均匀。
对于添加本发明品1和未添加本发明品1的低脂肪乳冰,由10名经过良好训练的评价人员对油脂感进行了感官评价。其结果是,10名评价人员全部评价为添加了本发明品1的低脂肪乳冰与未添加本发明品1的低脂肪乳冰相比,强烈地具有类似脂肪的浓厚感、类似脂肪的浓醇感、类似脂肪的顺滑感这样的风味方面的感觉特性,油脂感大幅增强。
(比较例3)
按照表6的配方制备肉味香精(比较品4)。

(实施例9)
向比较品4中添加0.1质量%(1000ppm)的(E)-6-辛烯醛,作为本发明品30。
(实施例10)粉末香料的制备
将比较品4或本发明品30(分别1g)分别作为油相部。向150g水中加入70g阿拉伯胶和20g海藻糖并溶解,在85~90℃加热杀菌15分钟。将其冷却至40℃后,分别添加10g油相部混合,通过TK-均相混合机乳化。将该乳液用Niro公司的Mobile Minor型喷雾干燥器,以入口温度140℃、出口温度75℃进行喷雾干燥,获得95g肉味香精粉末香料(分别作为比较品5、本发明品31)(本发明品31中的(E)-6-辛烯醛浓度为10ppm)。
(感官评价)
根据表7的配方,制备低脂肪的粉末拉面汤调料(50倍稀释用),向其中添加0.1%本发明品31或比较品5,分别作为本发明品32或比较品6(本发明品32中的(E)-6-辛烯醛浓度为10ppb)。

分别将8g本发明品32或比较品6分别用392g的70℃温水进行稀释(50倍稀释:本发明品32的稀释液中的(E)-6-辛烯醛浓度为0.2ppb),由10名经过良好训练的评价人员进行了感官评价。其结果是,10名评价人员全部评价为添加了本发明品32的拉面汤与添加了比较品6的拉面汤相比,强烈地具有类似脂肪的浓厚感、类似脂肪的浓醇感、类似脂肪的顺滑感这样的风味方面的感觉特性,油脂感大幅增强。
Claims (13)
1.低脂肪食品用的风味改善剂,其中,将(E)-6-辛烯醛作为有效成分。
2.风味得到改善的低脂肪食品,其中,含有权利要求1所述的风味改善剂。
3.低脂肪食品的风味改善方法,其中,通过将权利要求1所述的风味改善剂掺合到低脂肪食品中来进行。
4.低脂肪食品用的风味改善剂组合物,其中,含有权利要求1所述的风味改善剂。
5.权利要求4所述的风味改善剂组合物,其中,还含有选自2,4-癸二烯醛、(E)-2-壬烯醛、反式-4,5-环氧-2(E)癸烯醛、壬烯醛、棕榈酸、油酸、己酸、癸酸、辛酸、δ-癸内酯、δ-十二内酯和(Z)-4-羟基-6-十二烯酸内酯中的1种以上。
6.风味得到改善的低脂肪食品,其中,含有权利要求4或5所述的风味改善剂组合物。
7.低脂肪食品的风味改善方法,其中,通过将权利要求4或5所述的风味改善剂组合物掺合到低脂肪食品中来进行。
8.权利要求1所述的风味改善剂,其中,风味改善是油脂感的增强。
9.权利要求4或5所述的风味改善剂组合物,其中,风味改善是油脂感的增强。
10.权利要求1所述的风味改善剂,其中,低脂肪食品是脂肪含量被降低了的低脂肪食品。
11.权利要求4或5所述的风味改善剂组合物,其中,低脂肪食品是脂肪含量被降低了的低脂肪食品。
12.权利要求1所述的风味改善剂,其中,低脂肪食品是去油食品。
13.权利要求4或5所述的风味改善剂组合物,其中,低脂肪食品是去油食品。
