Description
本发明涉及一种二碳酸二甲酯(DMDC)/山梨酸钾/抗坏血酸的用于灭菌无碳酸和碳酸饮料的组合。
以果汁为基的软饮料,即饮茶饮料、及其他类型的软饮料、冷饮酒、脱醇酒和其它酒一般应被保护不被霉菌,酵母和细菌感染/腐败。已知有许多方法,如无菌包装,热灌装,管道巴氏灭菌和使用长效防腐剂。对于许多难以防腐的产品,已知的冷灭菌的二碳酸二甲酯的应用日益重要。然而,本领域技术人员目前仍面临这一困难。特别是,无碳酸的无泡软饮料,以果汁为基的饮料和/或以茶为基的饮料,即使采用了已知的防腐方法,问题还在发生,例如使用山梨酸盐和苯甲酸时的抗性现象,国家立法所限制的过量使用时的味道欠佳,在此情形下,最大允许剂量不是总能奏效。
可重复使用的塑料包装物,特别是PET瓶的不断增长的应用,也极大刺激了不经热处理的有效防腐方法的需要。人所共知,塑料包装物不是总能够经巴氏消毒而防腐。也知道出于味道和稳定性的原因,采用了许多更甜的组合,因而软饮料的pH值明显地升高到4。在这种较高pH下,用作防腐剂的有机酸-山梨酸、苯甲酸以其盐的形式存在,如山梨酸钾或山梨酸钠和苯甲酸钠,其浓度看来应升高,因为这些酸的抗微生物作用极大地依赖于pH,且只有其解离形式才有活性。
另外还知道水的硬度也极大地影响抗微生物活性,例如山梨酸钾,随CaCO3/MgCO3含量的升高,生成了山梨酸钙,很容易地絮凝出来,不再对饮料起防腐作用。为了补偿这种作用,通常应用明显提高的山梨酸钾浓度以保鲜饮料,这样导致损害风味,或依据某些国家法规,在某些条件下不允许以此浓度应用。实际工作中应花费大量资金以降低碳酸盐硬度。
人们惊奇地发现,通过组合使用抗坏血酸,山梨酸钾和/或苯甲酸钠,和二碳酸二甲酯(DMDC)即使在高水硬度(以CaCO3含量表达)下也有出色的饮料防腐作用。
因而,例如,175或230ppm DMDC与300ppm山梨酸钾和240ppm抗坏血酸组合使用,能够在高水硬度(等价于300ppm CaCO3)有效地保鲜饮料。
在此,饮料优选地指软饮料,如无醇的,调味的软饮料,如柠檬味的、含果汁的软饮料、茶/含果汁的软饮料的茶(所谓即饮茶饮料)混合饮料,以及相应的浓缩物和冷饮酒和脱醇酒。
在许多国家法规的定义之内,和法规所允许的范围之内,酒在根据本发明的组合物的作用下可能被可靠地防腐,且SO2含量极大地降低。本发明的组合物首先被用于上述的无泡饮料,然而用本发明的组合物亦可极好地灭菌低碳酸饮料和碳酸饮料。优选地,本发明的组合物用于所谓无泡,即,无碳酸茶饮料和茶/混合饮料。
优选地就本发明的内容而言,是将50至250ppm二碳酸二甲酯,总计200-500ppm山梨酸钾和/或苯甲酸钠和100至500ppm抗坏血酸一起使用,用于上述饮料,所使用的水的硬度不损害防腐质量。
特别优选地就本发明的内容而言,是使用150-250ppm二碳酸二甲酯,250至350ppm山梨酸钾和150至400ppm抗坏血酸,特别是用于高水硬度的饮料的防腐。
饮料用常规的方法制备,优选地,各个饮料成分与山梨酸钾和/或苯甲酸和抗坏血酸混合,然后用合适的计量仪器和二碳酸二甲酯混合,特别是如LEWA DA9或相应Burdomat型的计量器。
实施例1.一种无碳酸茶/水混合物(茶饮料),其水的硬度为300ppm CaCO3含量,与175ppm Velcorin,300ppm山梨酸钾和240ppm抗坏血酸混合。获得的饮料可适当地长期地防腐。2.类似于实施例1,加入230ppm Velcorin,这样也获得了可适当地长期地防腐的茶饮料。
Claims (8)
1.用于灭菌和防腐饮料的方法,其特征在于,50至250ppm二碳酸二甲酯,总计200至500ppm的山梨酸钾和/或苯甲酸钠和100至500ppm的抗坏血酸被掺入待防腐的饮料。
2.权利要求1的方法,其特征在于,150至250ppm二碳酸二甲酯,250至350ppm的山梨酸钾和150至400ppm的抗坏血酸被掺入。
3.权利要求1的方法,其特征在于,具有高水硬度的饮料被灭菌和防腐。
4.权利要求1的方法,其特征在于,被灭菌和防腐的饮料是无泡的,无碳酸的软饮料。
5.权利要求1的方法,其特征在于,被灭菌和防腐的饮料是茶和茶/果汁混合物。
6.由权利要求1的方法生产的饮料。
7.含有50至250ppm二碳酸二甲酯,总计200至500ppm的山梨酸钾和/或苯甲酸钠和100至500ppm的抗坏血酸的组合物在灭菌和防腐饮料中的应用。
8.用于灭菌饮料的防腐剂,含有50至250ppm二碳酸二甲酯,总计200至500ppm的山梨酸钾和/或苯甲酸钠和100至500ppm的抗坏血酸。
