Abstract
本发明公开了一种哈密瓜香精,该香精包括清香韵、甜香韵、果香韵和哈密瓜浓缩液,其中各组份的质量份数为:清香韵7~10份、甜香韵?12~15份、果香韵20~25份、哈密瓜浓缩液50~60份。该方法首先将哈密瓜榨汁后,用水稀释,然后通过大孔树脂吸附,用食用酒精冲洗后制得哈密瓜浓缩液;分析哈密瓜浓缩液的香气成分,得到香成份数据,由清香韵、甜香韵、果香韵构成;配制成哈密瓜味香精,得到的哈密瓜香精自然感和天然感好。

技术领域
本发明属于食品添加剂领域,具体地说是一种哈密瓜香精。
背景技术
瓜果富含营养价值且又易被人体吸收的物质,是夏季消暑的佳品。瓜果受种植区域的气候、土壤、肥料等条件限制,风格各异,为消费者提供了丰富多彩的美味佳品,深得民众的青睐。但是,瓜果的生产有强烈的季节性和地区限制,一般以当地鲜食为主,即使长途运输或模拟生长的瓜果那也无法与自然成熟的产品相媲美,再则上市期短,无法长年供应,因而,能尝到哈密瓜滋味的日子也不多。随着瓜果制品的发展,瓜汁、瓜酱、瓜罐头、瓜脯大量上市,使得资源能充分利用,并调剂补充了甜瓜的供应周期,也扩大了甜瓜的销售面,但由于瓜果制品须经加热、杀菌等工艺,加上冷藏和保鲜技术的缺乏,使瓜果香味改变、失却原有的特征香气味,失真性较大,导致产品滞销,远远不能适应消费的增长需要。
发明内容
为了提升香精品质,本发明的目的是提供一种哈密瓜味香精,该哈密瓜味香精自然感和天然感好。
本发明的目的是通过以下技术方案来实现的:
一种哈密瓜香精,其特征在于:该香精包括清香韵、甜香韵、果香韵和哈密瓜浓缩液,其中各组份的质量份数为:清香韵7~10份、甜香韵 12~15份、果香韵20~25份、哈密瓜浓缩液50~60份;清香韵由下列香原料组成:叶醇1.8~2.3份、己醇1.7~2.2份、顺式-6-壬烯醇3.5~4.5份、辛醇0.7~1.4份、桉叶素0.7~1.5份、己醛0.4~0.7份、壬醛0.3~0.7份、3.6-壬二烯醇1.8~2.5份;甜香韵由下列香原料组成:苯甲醇8~10份、2-甲基丁醇2.5~3.5份、乙酸苯乙酯1.5~2.4份、丁香酚0.6~1.5份、乙酸苯丙酯1.5~2.5份、苯乙醛1.8~2.7份、苯乙醇3.5~4.5份;果香韵由下列原料组成:乙酸乙酯28~35份、乙酸丁酯2.5~3.5份、乙酸异丁酯3~4份、乙酸2-甲基丁酯3.2~4.2份、乙酸己酯1.2~2份;丙酸乙酯0.6~1.3份、丁酸乙酯1.2~2份、异丁酸乙酯0.1~0.3份、2-甲基丁酸乙酯0.4~0.6份;己酸乙酯0.2~0.4份、甜橙油0.05~0.12份、柠檬油0.05~0.12份。
本发明中,哈密瓜浓缩液由下述方法得到:将100份哈密瓜切成碎块,然后用搅拌机搅成浆状,然后加入4倍量的纯净水稀释,搅拌均匀后,接着经300目尼龙网筛过滤,然后将过滤后的澄清液倒入装填有大孔树脂的层析柱中过柱,最后用20份食用酒精冲柱,得到哈密瓜浓缩液。
清香韵、甜香韵、果香韵的重量份数为:清香韵8份、甜香韵 10份、果香韵25份、哈密瓜浓缩液57份。
果香韵由下列原料组成:乙酸乙酯30份、乙酸丁酯3份、乙酸异丁酯3份、乙酸2-甲基丁酯4份、乙酸己酯2份;丙酸乙酯1份、丁酸乙酯2份、异丁酸乙酯0.3份、2-甲基丁酸乙酯0.4份;己酸乙酯0.4份、甜橙油0.12份、柠檬油0.12份。
本发明得到的哈密瓜香精自然感和天然感好。

一种哈密瓜香精,该香精包括清香韵8份、甜香韵 10份、果香韵25份、哈密瓜浓缩液57份。清香韵由下列香原料组成:叶醇2份、己醇2份、顺式-6-壬烯醇4份、辛醇1份、桉叶素1份、己醛0.7份、壬醛0.3份、3.6-壬二烯醇2份;甜香韵由下列香原料组成:苯甲醇9份、2-甲基丁醇3份、乙酸苯乙酯24份、丁香酚1份、乙酸苯丙酯2份、苯乙醛1份、苯乙醇3份;果香韵由下列原料组成:乙酸乙酯30份、乙酸丁酯3份、乙酸异丁酯3份、乙酸2-甲基丁酯4份、乙酸己酯2份;丙酸乙酯1份、丁酸乙酯2份、异丁酸乙酯0.3份、2-甲基丁酸乙酯0.4份;己酸乙酯0.4份、甜橙油0.12份、柠檬油0.12份。
