Abstract
复合苦丁茶饮品属于一种茶的配制品。本发明以苦丁茶、绞股蓝与优质绿茶为原料,经除杂、晾干、杀青、烘干与粉碎处理后按5~30∶3~30∶60~92的比例混匀分装,制成袋泡复合苦丁茶;将上述原料分别除杂、粉碎、浸提2次后合并滤液按3~40∶3~40∶25~92的比例混匀,制成复合苦丁茶口服液;本发明研制的复合苦丁茶饮品是药、饮兼用的保健茶,不但饮用方便,无毒副作用,而且具有明显的降脂、降压、减肥与消炎作用,是一种纯天然植物多功能保健佳品。
Description
本发明属于一种茶配制品,具体是一种复合苦丁茶配制品。
苦丁茶又名臬卢茶(Ilex kudincha)在中国已有两千年的饮用历史,据唐代名医陈藏器《本草拾遗》记载:“作饮止渴、除痰……久食,令人瘦,去人脂”。但本世纪初几近失传,CN1055284A公开了苦丁茶精及苦丁茶饮料的生产方法,但该发明的苦丁茶原料为冬青科的枸骨,而且是单一的枸骨嫩叶加工而成,因此虽然饮用方便,但保健效果不很显著。
本发明旨在重新挖掘开发苦丁茶资源,并且显著提高苦丁茶的保健功能。
本发明是以苦丁茶(Ilex kudincha)、绞股蓝与优质绿茶为原料加工制成的有显著的降脂、降压、减肥与消炎作用的袋泡复合苦丁茶、复合苦丁茶饮料等饮品。袋泡复合苦丁茶的加工方法是将苦丁茶、绞股蓝与优质绿茶原料经除杂、凉干、杀青、烘干与粉碎处理后按5~30∶3~30∶60~92的比例混合分装,其中苦丁茶幼嫩芽叶先在通风良好的20~35℃的室内铺成3~5cm厚,摊放1~5小时后在140~160℃温度下杀青,迅速摊凉散热,待杀青叶冷却至室温时揉捻,最后用直接或间接加热方法干燥至含水量小于6%后再粉碎。复合苦丁茶口服液的加工方法是将三种原料分别经除杂粉碎至16目以下,用水浸提2次,合并滤液后按3~40∶3~40∶25~92的比例混匀、灭菌、罐装即成,其中苦丁茶原料先用5倍沸水浸泡2~3小时后抽滤,滤渣再用3倍沸水在90~98℃条件下恒温抽提30分钟左右,抽滤后合并滤液;绞股蓝粉末用5倍沸水浸泡1小时,在99~100℃恒温条件下浸提30分钟后抽滤,滤渣再用3倍沸水继续在99~100℃条件下恒温抽提1小时左右,合并两次滤液;优质绿茶原料用4倍冷水在25℃以下浸提4~5小时,抽滤后茶渣又用3倍沸水,在90℃温度下继续浸提30分钟,抽滤,合并滤液。
下面进一步详述本发明。
苦丁茶树系冬青科冬青属(Ilex kudincha)植物,常绿乔木,高达20米,胸径60cm,叶呈矩圆形或卵状矩圆形,长4~30cm,宽1.5~8cm,边缘有疏齿,两面无毛,上面有光泽,叶柄粗短,长1~2cm,雌雄异株,花多数排列成假圆锥花序,球形核果,直径7mm左右,红褐色、外果皮厚,分核4粒。
经分析,苦丁茶芽叶中含有苦丁茶甙元(Kudinchagenin)、α-香树脂(α-angrin)、β-谷甾醇(β-sitosterol)、乌苏酸(Ursolic acid)以及人体必须的多种维生素、氨基酸和微量元素。为使苦丁茶饮品的降脂、降压、减肥与消炎作用明显,充分发挥苦丁茶中的有效成分的药效,在加工过程中应严格控制工艺条件,如袋泡苦丁茶加工时,将苦丁茶幼嫩芽叶铺成3~5cm厚摊放在通风良好的20~35℃的室内约1~5小时,以手折嫩茎不断为度,使表面水分散发,改变芽叶中酶作用方向,使营养物质和有效成分的组分比例合适,同时保持苦丁茶特有的香气。而复合苦丁茶口服液加工过程中,在第一次用沸水浸泡时,每隔15分钟翻动一次,第二次在恒温条件下浸提时,温度不能超过98℃,而且抽提时间30分钟左右即可,不宜过长。
绞股蓝俗称野人参,纯甜型绞股蓝蔓在复合苦丁茶系列饮品中不仅改善了苦丁茶的口感,而且二种植物对人体的保健作用得到了增补,不仅降脂减肥效果独特,还具防癌之功效。
经湖南省中医药研究部门的药效学研究表明复合苦丁茶能降低高脂血症大鼠的TC(血清胆固醇)、TG(甘油三脂)、升高HOL(高密度脂蛋白)和降低LOL(低密度脂蛋白)(见表1),表示具有降血脂作用;并且能抑制小鼠巴豆油所致的耳廓肿胀(见表2),表示具有抗炎作用。
又经该部门的急性慢性毒性试验,复合苦丁茶最大耐受量为100g/kg,相当于临床剂量(0.06g/kg)的1666.7倍,提示复合苦丁茶无毒性,使用安全。
32例高脂血症和单纯性肥胖症临床试验表明:
(1)降脂总有效率为78.57%,单纯性肥胖症减肥总有效率为83%;(见表3),
(2)TC、TG降低,HOL-CH升高(表4);
(3)继发性肥胖,单纯性肥胖体重下降均达到极显著水平(P<0.001),超重者达显著水平(P<0.05)(见表5);
(4)全部病例在饮用前后,尿常规、血常规、血小板计数、肝功能、转氨酶及心电图对比检查均未发现异常。饮用过程中除个别病例开始1-3天出现胃部不适,隐痛,尔后自行缓解外,其余均未见毒副反应,说明使用安全。
复合苦丁茶系列饮品既可作饮料,止渴消暑、又有明显的保健作用,对高血压、动脉硬化、冠心病、咽喉肿痛、慢性咽喉炎等疾病可防可治,强健身体,延年益寿,而对高血脂症患者与单纯性肥胖症患者又有显著的疗效,并且无毒副作用,是一种理想的纯天然植物多功能保健饮品。

实例一
(1)将苦丁茶的幼嫩芽叶在通风良好,温度为20-35℃的室内铺成3-5cm厚,摊放1-5小时,以手折嫩茎不断为度,然后用专用锅或杀青机,在锅温140-160℃条件下边炒边扬,彻底破坏酶的活性,以叶色暗绿,无光泽,手捏成团,松手散开为度:杀青后迅速摊凉散热,待杀青叶降至室温时,用手或揉捻机揉捻,使茎叶细胞部分破坏,叶成条索,边揉边解块;再采用直接(木炭)或间接(热管)加热方式干燥,确保无烟进入苦丁茶叶,干燥后水分含量在6%以下,再次除杂后,切碎过60-12目筛作为原料I;
(2)将收获的鲜绞股蓝蔓(纯甜型),除杂、洗净,晾干,切成1cm长左右,在120-140℃温度下杀青,摊凉至室温后烘干,使含水量在6%以下后切碎过60-12目作原料II;
(3)取无杂质,黄片6%以下,含水量小于1%的高山秀眉绿茶作原料III;
(4)称取20%原料I,20%原料II,与60%原料III充分混合分装在茶用滤纸袋中,每袋1.5克,即为袋泡苦丁茶,汤色翠绿,苦味偏重,茶味弱。
实例二
三种原料加工同实例一,称取5%原料I,3%原料II,92%原料III充分混和后分装在茶用滤纸袋中即可冲饮,本品汤色绿,微苦,回甘,茶味浓。
实例三
(1)苦丁茶初制品除杂后,粉碎至16目以下,5kg苦丁茶粉末加25kg沸水浸泡2-3小时(每隔15分钟翻动一次),抽滤或离心,滤渣加沸水15kg,98℃恒温抽提30分钟后抽滤或离心,合并两次滤液为原料I;
(2)绞股蓝干料除杂后,粉碎至16目以下,5kg绞股蓝粉末加沸水25kg浸泡1小时,99-100℃(缓沸)恒温浸提30分钟,抽滤或离心,滤渣加沸水15kg,99-100℃(沸)恒温抽提1小时,抽滤或离心,合并两次滤液为原料II;
(3)优级绿茶用小一芽二、三叶鲜叶为原料,粉碎至16目以下,6.25kg绿茶粉末加冷水25kg在25℃以下低温浸泡4-5小时,1小时翻动1次,抽滤或离心,茶渣加水18.75kg,90℃温度下浸提30分钟,抽滤或离心,两液合并为原料III:
(4)取原料I14.5kg、II14.5kg、III33.5kg,充分混匀、灭菌、灌装即为复合苦丁茶口服液,汤色绿,偏苦回甘。

1、一种复合苦丁茶饮品,其特征在于该饮品是以苦丁茶、绞股蓝与优质绿茶为原料,经除杂、凉干、杀青、烘干与粉碎处理后,5~30∶3~30∶60~92的比例混合分装,其中苦丁茶幼嫩芽叶先在通风良好的20~35℃的室内铺成3~5cm厚,摊放1~5小时后,在140~160℃温度下杀青,迅速摊凉散热,待杀青叶冷却至室温时揉捻,最后经直接或间接加热干燥至含水量小于6%后再粉碎,袋装成袋泡复合苦丁茶。
2、一种复合苦丁茶饮品,其特征在于该饮品是以苦丁茶、绞股蓝与优质绿茶为原料,分别经除杂、粉碎至16目以下,用水浸提2次,合并滤液后按3~40∶3~40∶25~92的比例混合、灭菌、灌装即成,其中苦丁茶原料先用5倍沸水浸泡2~3小时后抽滤,滤渣再用3倍沸水在90~98℃条件下恒温抽提30分钟,抽滤后合并滤液,绞股蓝粉末用5倍沸水浸泡1小时,在99~100℃恒温条件下浸提30分钟后抽滤,滤渣再用3倍沸水继续在99~100℃条件下恒温抽提1小时,合并两次滤液,优质绿茶用4倍冷水在25℃以下浸提4~5小时,抽滤后茶渣用3倍沸水在90℃温度下继续浸提30分钟,抽滤,合并滤液,灭菌、灌装即成复合苦丁茶口服液。
