Description
Kutte)-Messer. Sichelförmige Kuttermesser mit säge zahnartiger Schneidekante, zwecks Erzielung einer guten Knetwirkung ausser der Schneide wirkung, sind bekannt. Um diese beiden Wirkungen zu erhöhen, sind beim Kutter- messer gemäss. vorliegender Erfindung die Schneidezähne aus der Fläche des Kutter- messers seitlich abgebogen.
Auf beiliegender Zeichnung ist eine bei spielsweise Ausführungsform des Erfin- dungsgegenstande3 in einer Seiten- und einer Stirnansicht dargestellt.
1 bezeichnet .ein sichelförmiges Kutter messer. Dieses ist mit Schneidezähnen 2 versehen, die scharf geschliffene Schneide kanten 3 aufweisen. Diese Zähne 2 sind, zwecks Erhöhung der Schneidewirkung so wie der Knetwirkung in bezug auf das zu behandelnde Fleisch, seitlich aus der Ebene des Kuttermessers 1 abgebogen, und zwar sind aufeinanderfolgende Zähne nach ver schiedenen Seiten des Messers ausgebogen. Dadurch wird die Schnittbahn wesentlich verbreitert, so dass das Fleischgut rascher als wie mit bekannten Kuttermessern ver arbeitet wird.
Durch die durch das Abbie gen der Zähne 2 entstandenen schiefen Flä- chen 4 wird die Knetwirkung erhöht, da diese Flächen 4 das Fleischgut seitlich ver drängen. Die Zähne 2 besitzen je eine Schneidekantspitze 5; die in bezug zur Dreh richtung des Kuttermessers 1 nach hinten gerichtet ist, wobei die Zähne hinter dieser Spitze 5 steil abfallen.
Aufeinanderfolgende Zähne 2 schneiden das Fleisch nie an dersel ben Stelle, jeder Zahn zieht eine eigene Schneidbahn im Fleisch. Selbstredend kön nen die Zähne nicht nur auf diese darge stellte Form beschränkt sein, sondern ihre Formgebung kann auch anders als wie ge zeichnet sein.
