Abstract

COMPOSIçãO DE BARREIRA CONTRA UMIDADE COMESTìVEL E MéTODO PARA REDUZIR A MIGRAçãO DE UMIDADE ENTRE ALIMENTOS. São apresentadas composições de lipídio que são eficazes como barreiras contra umidade comestíveis pra reduzir a migração de umidade entre os componentes do alimento. As composições de lipídios incluem uma mistura de composições de éster de glicerol estruturado (SGE) carregando resíduos de ácido graxo de cadeia curta (dois a quatro carbonos), de cadeia média (seis a doze carbonos) e cadeia longa saturada (quatorze a vinte e dois carbonos). As composições de SGE da invenção são de calorias reduzidas e totalmente saturadas, contêm essencialmente zero de ácidos graxos trans-insaturados e contêm componentes presentes nas formas estáveis de cristal alfa.
