Abstract
"MéTODO PARA ESTABILIZAR UM PRODUTO ALIMENTìCIO, MISTURA DE ESTABILIZADOR-EMULSIFICANTE E USOS DOS MESMOS". A invenção se refere a um método para estabilizar um produto alimentício pela adição à ingredientes alimentícios que contém gordura de um emulsificante dispersível frio e um estabilizador hidrocolóide para fornecer uma emulsão gordurosa estável ao calor preparada a frio, com a condição que quando o emulsificante for o estearil-2-lactilato de sódio (SSL), o estabilizador não seja a iota-carragenana. A invenção se refere também a uma mistura de um estabilizador hidrocolóide solúvel no frio e de um emulsificante dispersível a frio capazes de melhorar a estabilidade de produtos alimentícios emulsificados preparados a frio e ao uso dos mesmos, bem como a um produto de carne emulsificado que seja preparado a frio e estabilizado no calor por uma mistura de acordo com a invenção.
