Abstract

"AGENTE DE MODIFICAçãO DE CARNE, MéTODO DE PRODUçãO DE PRODUTO DE CARNE E PRODUTO DE CARNE". A presente invenção refere-se a um agente de modificação de carne que inclui uma emulsão de óleo em água contendo: (A) de 10 a 60 partes em peso de uma gordura/óleo animal, (B) de 0,01 a 1 parte em peso de um amido, (C) de 15 a 40 partes em peso de um amido sacaridificado, (D) de 0,3 a 8,0 partes em peso de um tensoativo não iónico, (E) de 0,41 a 7,5 partes em peso de um polissacarídeo de aumento de viscosidade, (F) de 0,02 a 0,05 parte em peso de um antioxidante, (G) de 0,03 a 0,1 parte em peso de um agente seqüestrante de metal, (H) de 0,005 a 0,5 parte em peso de um agente de ajuste de pH, (I) um conservante contendo de 0,00001 a 0,005 parte em peso de tujaplicina, e (J) água.
