Abstract
"MéTODO DE APERFEIçOAMENTO DO AMACIAMENTO DE CARNE E PRODUTOS DE CARNE E PRODUTOS ALIMENTìCIOS CORRELATOS". Um método para aperfeiçoar o amaciamento de tecidos de carne bovina e produtos de carne produzidos a partir de animais tratados de acordo com o método. O método envolve o aumento da concentração de cálcio no tecido de músculo do gado antes da ceifa do animal até um grau suficiente para ativar ou intensificar os mecanismos de amaciamento pós-morte. Isso é obtido, mais preferencialmente, através da administração de Vitamina D, seus análogos ou derivados, ou as suas combinações, a concentrações superiores àquelas requeridas nutricionalmente para o gado a fim de diminuir a força de cisalhamento (aumento do amaciamento) dos tecidos da carne. Também são apresentados produtos alimentícios dopados com o suplemento.
