"EMULSãO COMESTìVEL DESPEJáVEL, E, PROCESSO PARA SUA PREPARAçãO". Uma emulsão de baixo teor de gordura ou de gordura zero, comestível, despejável, que compreende uma fase aquosa não transformada em gel contínua e uma fase de partículas de gel dispersadas, em que as partículas de gel ocupam de 20 a 70% do volume da fase aquosa e as partículas de gel compreendem partículas de gel de biopolímero duras e/ou partículas de gel de biopolímero moles.
