Abstract

"ISOFLAVONA DE AGLUCONA ENRIQUECIDA COM SORO DE PROTEìNA VEGETAL, MATERIAL DE PROTEìNA DE SORO, MATERIAL DE ISOFLAVONA DE AGLUCONA, MATERIAL COM ALTO TEOR DE GENISTEìNA E MATERIAL COM ALTO TEOR DE DAIDZEìNA E PROCESSO PARA A PRODUçãO DOS MESMOS A PARTIR DE UM SORO DE PROTEìNA VEGETAL". Um soro de proteína vegetal enriquecido em isoflavona de aglucona, um material de proteína de soro, um meterial com alto teor em genisteína, um material com alto teor em daidzeína e um material de isoflavona de aglucona são proprocionados, bem como um processo para a produção do mesmo de um soro de proteína vegetal. Os conjugados de isoflavona em um soro de proteína vegetal são convertidos em glucosídios de isoflavona por tratamento de soro a uma temperatura e a um pH, por um período de tempo suficiente para realizar a conversão. Os glucosídios de isoflavona são convertidos em isoflavonas de aglucona pro reação enzimática, para produzir um soro de proteína vegetal enriquecido em isoflavona de aglucona.
