Permite também a troca do modelo de facas a ser utilizado de acordo com o tipo do alimento processado. é composto em linhas gerais da base (6), de uma placa de travamento (7) integrada à alavanca (3) com um knob (8) instalado na sua extremidade, do conjunto (13) composto pelas facas (19), pelo corpo cónico (14), pelo anel de vedação (10), pelo corpo cilíndrico (17) e pelo mancal (11).
