Abstract
"MéTODO PARA A PRODUçãO DE áCIDO LáCTICO OU UM SAL DO MESMO POR SACARIFICAçãO E FERMENTAçãO SIMULTâNEAS DE AMIDO". A presente invenção refere-se a um método para a produção de ácido láctico ou um sal do mesmo onde amido é submetido a um processo de sacarificação e fermentação simultâneas, o método compreendendo sacarificar o amido em um meio compreendendo pelo menos uma glicoamilase e simultaneamente fermentar o amido usando um microorganismo, e opcionalmente isolar o ácido láctico do meio, caracterizado pelo fato de ser usado um microorganismo produtor de ácido láctico moderadamente termofílico. A invenção refere-se ainda a um método para a realização do referido processo na presença de um microorganismo produtor de ácido láctico moderadamente termofílico, que tenha sido adaptado para ter seu desempenho máximo ao pH operacional.
