A presente invenção refere-se a um processo para a produção de queijo partindo de leite para fabricação de queijo tratado com enzima e ao uso do queijo produzido resultante como ingrediente em produtos alimentícios. Mais particularmente, a presente invenção refere-se a um processo para a produção de queijo partindo de leite para fabricação de queijo tratado com fosfolipase A e lisofosfolipase.
