Abstract
"PRODUTOS ALIMENTìCIOS QUE CONTéM EMULSIFICADORES DE ALTO DERRETIMENTO". A invenção está direcionada a produtos alimentícios que incluem uma gordura líquida e emulsificadores de alto ponto de fusão. A gordura líquida e um emulsificador de alto ponto de fusão podem substituir a gordura sólida no produto alimentício. O emulsificador de alto ponto de fusão pode também ser adicionado ao chocolate para fornecer uma composição de chocolate que tem uma melhor retenção de forma em temperaturas elevadas. O componente emulsificador dá à gordura no chocolate uma estrutura que resiste à perda de forma mesmo em temperaturas elevadas e impede que a composição de chocolate adira na embalagem quanto sujeita a temperaturas elevadas. A invenção também fornece um método para fabricar a composição de chocolate.
