Abstract
The invention relates to stable and liquid olein fractions, wherein less than 8.6 percent of the triacylglycerols (TAGs) have the general formula SMS, and at least 26 percent of the triacylglycerols (TAGs) of said olein fraction have the general formula SMM, wherein S represents saturated fatty acid and M represents monounsaturated fatty acid, where the olein fraction is obtained by fractionationof high-oleic high-saturated sunflower oilý and collecting the liquid fraction. The invention relates also to a method of preparing a stable and liquid olein fraction through low-temperature fractionation of high-oleic high-saturated sunflower oil.
