Abstract
La presente invención se refiere a una bacteria de la especie Lactobacillus fermentum, en donde la bacteria se caracteriza en que aumenta el pH de un producto lácteo fermentado que comprende Lactobacillus fermentum durante el almacenamiento después de la fermentación en comparación con un producto lácteo fermentado con el mismo cultivo iniciador que contiene el Lactobacillus fermentum. En una modalidad relacionada, la presente invención proporciona una bacteria de la especie Lactobacillus fermentum caracterizada en que un producto de leche fermentada que comprende Lactobacillus fermentum mantiene un pH superior a 4.0 cuando se almacena durante por lo menos 14 días a 25°C, en donde se obtiene el producto lácteo fermentado. mediante un método que comprende incubar una leche con Lactobacillus fermentum en una concentración de por lo menos 107 UFC/g y con un cultivo iniciador, fermentar hasta que se alcanza un pH de 4.6, agitar el producto fermentado y enfriar. La invención se refiere además a composiciones que comprenden las bacterias, métodos para producir productos lácteos fermentados que usan las bacterias y los productos así obtenidos.
